‘CHOCO NUTRI BAR’

INTRODUCTION
 Choco nutri bar is a ready to eat multi
nutrient bar.
 It provides good amounts of calories,
protein, dietary fibre and other nutrients
and has a good satiety value.
 The product is targeted for all age
groups
 Grab and gobble nutrition bars.
 It is a functional food product as
walnuts, oats, soya bean flour,
almonds, dark chocolate and gingelly
seeds come under the category of
 Oats is high in soluble dietary fibre
beta – glucan.
 Walnuts are unique because they are
rich in n-6 (linoleate) and n-3
(linolenate) polyunsaturated fatty
acids and as a part of heart – healthy
diet, lower blood concentrations.

 Almonds are high in magnesium
(functional component). Magnesium
keeps blood pressure normal, bones
strong and the heart rhythm steady.
• Sesame seed or gingelly seeds are
popularly called as “Queen of Oilseeds” due
to its high degree of resistance and

• Soy is assessed by the FDA's "Protein
Digestibility Corrected Amino Acid Score"
method. The component isoflavones in
soybean functions as Anti-carcinogenetic
activities.

CVD, and improvements in endothelial

STANDARDIZATION (FOR 6 BARS)
METHOD OF PREPARATION
Roast all the ingredients separately and mix it well.
(Except jaggery)
Melt jaggery
Add above ingredients and mix well, remove from
heat
Spread the mixture evenly in an aluminum tray
Cut into equal sized bar, immediately and refrigerate
for 5minutes
Place the chocolate in double boiler on low heat
Coat the bar with dark chocolate and refrigerate for
5-7minutes
Ready to serve
SENSORY EVALUATION
Sensory evaluation was carried out
by 15 naive panelists.
It was done by score card method.
A five point scale was maintained
with sensory attributes of texture,
flavor, taste, appearance and
brittleness.
Sensory evaluation helped us to
finalize the designed product.
