Processing of almond was done at different temperatures (80, 90, 100 and 110°C), to produce almond milk samples (A, B,
C and D). The almond milk sample (C) processed at normal boiling temperature (100°C) kept as reference standard. Using different
standard analytical methods, almond milk were analyzed for physiochemical, microbiological, and sensory attributes. Due to increase in
temperature the crude fat and moisture content decreased significantly (p<0.05)><0.05)><0.05) from 2.24-1.33×103 CFU/ml for sample A to D processed at 80-110°C, while yeast and mold from 1.22-0.35×102 CFU/ml.
The mean value score awarded to all sensory attributes increase from A to C but decrease in D. Almond milk products were acceptable,
highest acceptability score (8.33) awarded to milk sample C processed at 100°C followed by samples B, A and D. Processing of almond
milk at 100°C provide the better milk product with all measured characteristics suggested for almond milk processing.

— Protein-energy malnutrition in children is a public health problem. This nutrition problem is attributed to inappropriate complementary feeding. Indeed, the cost of high-quality food supplements is high and traditional food supplements have a low nutritional quality related to the presence of antinutritional factors. The objective of this study is to determine acceptability and antinutritional factors in attiéké / cashew kernel composite flours. The cashew kernel flour is produced after various technological treatments to obtain two types of flour (unfermented flour and fermented flour). Physico-chemical and sensory analyzes are performed. The results showed that fermentation has an influence on the parameters studied. The protein contents of the unfermented formulations range from 7.53% to 10.62% while those of the fermented formulations range from 8.23% to 11.53%. Both formulations contain antinutritional factors.

(UF0) were used for dahi preparation in the present study.
Treatments were evaluated for rheological, textural and sensorial
characteristics. Significant increase (p < 0.01) in values
of firmness, stickiness, work of shear, work of adhesion and
sensory scores, but significant decrease (p < 0.01) in whey
syneresis values were observed with treatments UF1, UF2,
UF3 and UF4 as compared to UF0. Principal component analysis
(PCA) revealed that first four principal components (PC)
explained 87.39 % relationship between samples and attributes.
PC1 accounted for 48.34 % of data variance was characterized
by protein content, firmness, work of shear, body &
texture and opposed by total carbohydrates, stickiness, syneresis
and work of adhesion. Total carbohydrates content
(r = −0.982, P < 0.01), whey syneresis (r = −0.783,
P < 0.01), stickiness (r = −0.729, P < 0.01) and work of
adhesion (r = −0.684, P < 0.01) are negatively while body
and texture (r = +0.600, P < 0.01), firmness (r = +0.574,
P < 0.05) and work of shear (r = +0.538, P < 0.05) of dahi
are highly positively correlated with protein content.

Abstract— Yoghurt is a coagulated milk product that results from the fermentation of lactose in milk by Lactobacillus bulgaricus and Streptococcus thermphillus. The health benefits can be increased by adding native fruit pulps. Yoghurt with different fruit pulp includes papaya and cactus pear was prepared and stored up to 10 days. The fruit were added at the rate of 5%, 10% and 15%w/w. Physicochemical properties of yoghurt samples include moisture, protein, fat, carbohydrate and ash were determined at first days of storage. Acidity, pH, syneresis, water holding capacity (WHC), total count, coliform group, yeast &mould and organoleptic properties were evaluated yoghurts at zero time, after 5 and 10 days of storage at refrigerator.There were significantly differences between plain yoghurt and fruit yogurt in the pH, moisture, ash, protein, carbohydrate content and titratable acidity amounts 5 day of storage. The results showed that acidity increased over the storage period. Highest values for WHC and lowest values for syneresis were belonged to yogurt with 15 % cactus pear and 10 days storage with 71.21% and 16.01%, respectively. Sensory evaluation results showed that there were significant differences among the yoghurt samples. The yoghurt containing papaya pulp had the highest overall acceptability scores as compare to other fruit yogurt samples and also plain yogurt. The results of current study demonstrated that the addition of fruits to the yogurt significantly improved the quality of yogurt.
— The present study evaluated physico-chemical and sensorial qualities of value added banana products. Unripe fruits of Cavendish variety were processed for making banana flour. Value added products like dough, chapatti and banana kheer were prepared from banana flour. Rice and basin flour were also used in chappati. Unripe banana fruit, banana flour and their products were analysed for pH, titratable acidity, moisture (%), TSS (Brix) and vitamin C. The results showed that the maximum pH (7.68) and TSS (26.30 brix) recorded from the kheer, However, Ash (0.86%) and vitamin C (18.3mg/100gm) were observed highest in chapatti prepared from banana and rice flours as compared to chappati prepared from banana flour only (12.54). Unripe banana fruits had maximum percentage of moisture (72.08%) in comparison to banana products. The minimum pH (6.79) and titratable acidity (0.02) were observed from the unripe banana fruits. While, banana flour had minimum moisture (7.49%). Minimum TSS (5.30) were recorded in chappati prepared from mixture of banana-rice flour and banana-basin flour. The results shows that processing of banana for value added products alter the physico-chemical qualities of banana.
Optimization and Modeling of Energy Bars Based Formulations by Simplex Lattic...AI Publications
Simplex lattice mixture design was utilized to optimize high caloric and acceptable energy bars. Fourteen formulations of injera were produced from flour blends of high quality cassava flour (0–100%), toasted bambara groundnut (0–100%) and roasted cashew kernel(0–100%).The study was carried out to evaluate the effect of varying the proportions of the independent variables on these dependent variables (proteins, fats, carbohydrate) and general acceptability qualities of the energy bars. Proteins, Fats and Carbohydrates were indicators of the calorie values of these energy bars. Mixture response surface methodology was used to model the proteins, fats, carbohydrates and general acceptability with single, binary and ternary combinations of high quality cassava flour, toasted bambara groundnut and roasted cashew kernel flours. The effect of variation in levels of cassava, bambara groundnut and cashew kernel flours on the fats, proteins, carbohydrates and general acceptability of the formulated energy bars were adequately predicted with regression equation. The statistical adequacy of the generated polynomial equation of the responses was checked using the following indices: F-value at p0.05, coefficient of determination R2, Adj. R2, lack of fit, and coefficient of variation (CV). Optimization suggested energy bars containing 61.40 % high quality cassava flour, 0.00 % bambara groundnut flour and 38.6 % cashew kernel flour as the best proportion of these components with a desirability of 0.775. Numerical optimization indicated that better sensory and high calorific qualities are directly related with the proportion of cassava flour, bambara groundnut flour and cashew kernel flour respectively. The optimum blends as validated showed a close relationship between the predicted and experimental values.

Milk is a very popular drink in Bangladesh. This study was conducted to evaluate the microbial
content of milk during preservation and to make a suitable decision on the effect of preservation on the
microbial population in milk. Major tests considered in the research work were titratable acidity, COB test,
total viable bacteria count (TVC) and Coliform count. The initial average TVC in raw milk was 5.49±0.69 log
c.f.u. /ml. which increased to 6.25±0.10 log c.f.u. /ml. indicated deterioration in milk quality. In case of
pasteurized milk samples initial average total viable count was 4.43±0.17 log. c.f.u. /ml. increased to
5.92±0.05 log c.f.u. /ml. after six days of preservation. UHT milk samples which should not contain microbial
contamination also provided with initial average total viable count of 3.32±0.06 log c.f.u. /ml. and 3.59±0.04
log c.f.u. /ml. during preservation at room temperature for four months. Coliform bacteria usually cannot
survive at the pasteurization temperature .The initial average coliform bacteria were estimated 3.55±0.12 log
c.f.u. /ml. and 2.08±0.11 log c.f.u. /ml. for pasteurized and UHT milk samples which increase to 3.81±0.06 log.
c.f.u. /ml. for pasteurized milk after six days of preservation and 2.43±0.10 log c.f.u. /ml. for UHT milk
samples after four months of preservation. These result of the experiment suggests that both raw and
pasteurized milk tends to increased in microbial population during refrigeration on the other hand, UHT milk
which regards as a readily drinkable drink must not be purchased or consumed after three months from the
production due to the microbial content especially coliform bacteria in milk sample increased by substantial
amount.

Quinoa is a good choice for those with hormone imbalance like PCOS and PCOD since it is strong in protein and has a great amino acid balance. is packed with nutrients. Protein and fibre are good for people with diabetes and celiac disease because they assist to regulate blood sugar levels. The main idea of study was to develop a vegan milk as it can be served to the lactose intolerance people. Naturally free from sugar. Proper and ideal packaging along with refrigeration storage makes the quinoa milk fit and in sound condition for up to 3 days. Flavoured quinoa milk was produced by extracting milk from sprouted soaked quinoa. Extract milk blended with dark chocolate, cocoa powder, cashew nut and dates. The blending of the milk improves its creaminess and smoothness. Three distinct dilutions were created using quinoa milk and water ratios 1 4, 1 6, 1 8 for further milk formulations. The optimum formulation is employed for additional organoleptic analyses, including taste, colour, mouth feel, and general acceptability. The evaluation of microbiological parameters and proximal analysis came next. The quinoa milk had a 75.3 of moisture content and 0.52 of ash content in addition it was found to have 3.53 of protein content 17.25 of carbohydrates content and 3.67 of fat content and energy 166.15 kcal. The results show that quinoa milk is a vegan product with a high nutritional value that lactose intolerant individuals should consider. ABSTRACT- The present study was undertaken to make paneer enriched with fiber otherwise fiber deficient paneer. Coconut powder is in the form of fiber was included in the preparation of paneer. Paneer is one such product which is a regular dietary favorite among the Indians. Paneer has short life span at room temperature. So, the present study was aimed to assess the shelf life of salted paneer at different intervals in refrigeration temperature and physico-chemical attributes also. Paneer is prepared by combined action of acid coagulants and heat treatment of buffalo and cow milk or a combination thereof. Paneer have pleasant odour and characteristic mild acidic flavour. No extraneous coloring matter should be added to paneer at any stage. Paneer is a highly perishable product and has limited shelf life, largely because of its high moisture content. Its shelf life was reported to be only six days under refrigeration, though its freshness is lost within three days. The spoilage of paneer occurs mainly due to the growth of microorganisms, which bring about various physico-chemical changes. The growth of microorganisms can be delayed and shelf life of paneer be increased by addition of salt in the paneer. All treatment combinations were analyzed for a total viable count (bacteria) on nutrient agar and fungi on PDA and Coliform on Mcconkey agar. All the samples had bacteriological count ranging from 1x104 to 14x104 cfu/gm. And in all samples coliform was absent, so the product was found to be good and proper hygienic condition were maintain during the preparation, handling, and storage.

Microbiological and Physicochemical Properties of Wholegrain Millet Sourdough...Premier Publishers
This study enumerates the bacterial and fungal isolates responsible for the fermentation of millet sourdoughs, evaluates the antimicrobial safety of the sourdough starters and the quality of bread produced thereafter. The individual flours were spontaneously fermented in the ratio 1:1 (w/v) for 48 h. At the end of the fermentation, the microbial consortium of the sourdough meals obtained were determined and also screened for antagonistic activity against selected pathogens. All the sourdough starters revealed strong clearance zones against the selected food borne pathogens with values ranging from 5.00 to 16.1 mm. The proximate compositions of the breads were improved by the sourdough fermentation process compared with the raw flour. The moisture content of flour determined ranged from 7.48 to 11.20% while the protein, fat, ash, crude fibre and carbohydrate were 9.53 to 12.4%; 2.13 to 2.78%; 0.82 to 2.87%; 2.10 to 4.67% and 71.83 to 76.33% respectively. The carbohydrate content of the breads reduced with fermentation and ranged from 63.10% to 73.33% while the protein, ash, crude fibre and fat content increased and ranged from 11.57 to 15.31%; 2.39 to 3.08%; 1.76 to 3.62% and 7.15 to 12.32% respectively. The highest value for calcium 48.86 mg/100 g was exhibited by pearl millet bread. Sensory evaluation showed significant difference (P < 0.05) in the appearance, taste, colour, aroma and texture of the bread samples. The findings have suggested that indigenous wholegrain cereals could be employed for bread production, which has the potential to improve the nutritional profile and safety of cereal fermented foods which forms the bulk of the diet of rural dwellers in sub-Saharan Africa.

is an appearance of elongated water soaked lesions that expand rapidly. Ascospore infection is quite general and occurs on the other plant
parts. Effective pathogenesis by the S. sclerotiorum requires the secretion of oxalic acid and lytic enzymes. Germination of overwintered
sclerotia, and release, survival and germination of ascospores are important factors for the development of disease. The capability of
sclerotia to survive for more than 5 years, so it becomes very difficult to manage the Sclerotinia diseases. Management of S. sclerotiorum is

National fish production reached in 2013 an amount of 1,245,912 tons. Now the pelagic fish industry generates a
significant amount of waste up to 60%. The physicochemical analyses of these fish by-products showed a wealth of organic material
including proteins (87.4% dry weight) and minerals (9% dry weight). These components and others are capitalizing to be used for
agricultural or agri-food. Biotransformation of biotechnologically in fish products was performed in the laboratory. Fresh fish byproducts
were ground and mixed with a carbon-rich source of carbohydrates. The mixture was inoculated with selected fermentation
yeast. The fermentation of evolution was controlled by monitoring chemical parameters (pH, dry matter, ash, total nitrogen) and
microbiological (FMAT, Enterobacteriaceae: fecal and total Coliforms, yeasts). Then the product thus stabilized at a pH of 3.8 has
undergone a second treatment. A hydrolyzate rich in amino acids and trace elements was obtained with excellent hygienic quality after a
total elimination of pathogens. Its use will be as factors for fertilizer and soil amendment. We produced three biostimulants necessary for
plant growth: Rooting fertilizer, Plant elongation fertilizer and production fertilizer. The application tests on these biofertilizers in the
laboratory were performed and have allowed obtaining promising results.

This study is conducted to investigate knowledge, attitudes and behavior of university culinary program students about
genetically modified organisms (GMOS). The study is carried out among 214 university students aged (99 female, 115 male).
Demographic characteristics of students, their knowledge, attitude and behavior of Genetically Modified Organisms (GMO) are taken
into consideration in the data collection process. 10 open-ended questions and an attitude scale questionnaire which consists of 30
questions was applied. The data obtained with the SPSS 20.0 program by using frequency (F), percent (%), t-test and one way analysis
of variance (ANOVA). For the question “Have you ever heard of the term GMO?” 32 students (15%) stated that they never heard of
the term. Students from the culinary program, replied the question “In your opinion, is GMO beneficial or harmful? ‘’ 95, 8% replied as
harmful. According to replies of culinary program 1. and 2. year students there was no significant difference between their answers to the
question (p> 0.05). For the question ’’ If it is harmful, why?’’ students stated that GMO causes cancer. The average of female students
answer is 3, 40, while the average of male students is 3,42. T test conducted to these averages gives the result of p=0.389 (p> 0.05). The
averages of their responses to the items and the number of male and female students have been very close to each other. But there is
statistical difference to the reply of 28. Question which is p=0.02 (p<0.05). The analysis demonstrates that students have enough basic
knowledge about genetically modified organisms, but it was observed that they experience conceptual confusion. Most of the students
believe that GMO technology is harmful, and there are some conceptual mistakes. It was concluded that the concept of the course will
increase knowledge and awareness about GMOs in the curriculum topics that will help to eliminate confusion.
E-waste is an end of the life span of electric or electronic appliances which contain the complex heavy metals. It is causing
severe health concerns for millions of people around the world, mostly in the developing nations of India, Africa, Europe, etc. More of
these wastes are ending up in dumping yards and recycling centers, cause a new challenge to the environment. In general electronic
gadgets are intended to make our lives happier and simpler, but their toxicity, removal and recycling becomes a health horrendous. Many
research papers have been reported on microbial remediation of heavy metals present in E-waste. The pioneer work was reported on
1998, bio-dissolution of spent nickel batteries using Thiobacillus ferroxidans, which is the first step to recycle and discarded batteries by
using microbes as eco-friendly method. This review paper provides an insight in to the bioremediation of heavy metals from E-waste by
potential microorganisms, in an eco-friendly way and provide pathway for current researchers.

Antioxidants play an important role in inhibiting and scavenging free radicals, thus providing protection to human against
infections and degenerative diseases. Current research is now directed towards natural antioxidants originated from plants due to safe
therapeutics. Poly herbal drugs is used in Indian traditional medicine for a wide range of various ailments. To understand the mechanism
of pharmacological actions, antioxidant properties of the Poly herbal drugs extract were tested using standard in vitro models. The
ethanolic extract of Poly herbal drugs exhibited strong scavenging effect on superoxide, nitric oxide radical and reducing power radical
scavenging assay. The free radical scavenging effect of Poly herbal drugs extract was comparable with that of the reference antioxidants.
The data obtained in the present study suggests that the extract of Poly herbal drugs have potent Invitro antioxidant and Anti Diabetic
activity against free radicals, prevent oxidative damage to major biomolecules and afford significant protection against oxidative damage.

Human Noroviruses (HuNoVs) are important enteric pathogens, which affect the stomach and intestines, leading to
gastroenteritis or more commonly called the "stomach flu" or “winter vomiting bug". HuNoVs are mainly transmitted by the fecal-oral
route, either by directly infected person-to-person contact or directly via contaminated foods, water and surface areas. The virus is highly
contagious as 10-100 virus particles are sufficient to cause diseases. HuNoVs can spread easily and cause prolonged outbreaks. This is
due to their environmental persistence, high infectivity, being resistance to disinfection and difficulty in preventing transmission.
HuNoVs are the most common causative agent leading to acute gastroenteritis among infectious diseases worldwide and poses a serious
public health problem, especially among children being the most susceptible. In developing countries, the highest cost of medical care
after respiratory infections is listed for acute gastroenteritis. In this study, Norovirus outbreaks, precautions, its identification and
struggles were informed and some suggestions were made about this case.

Intravital microscopy (IVM) is a powerful tool utilized to study cellular behavior over time and space in vivo. Much of our understanding of cell biology has been accomplished using various in vitro and ex vivo methods; however, these studies do not necessarily reflect the natural dynamics of biological processes. Unlike traditional cell culture or fixed tissue imaging, IVM allows for the ultra-fast high-resolution imaging of cellular processes over time and space and were studied in its natural environment. Real-time visualization of biological processes in the context of an intact organism helps maintain physiological relevance and provide insights into the progression of disease, response to treatments or developmental processes.
In this webinar we give an overview of advanced applications of the IVM system in preclinical research. IVIM technology is a provider of all-in-one intravital microscopy systems and solutions optimized for in vivo imaging of live animal models at sub-micron resolution. Deep Behavioral Phenotyping in Systems Neuroscience for Functional Atlasing a...Ana Luísa Pinho
Functional Magnetic Resonance Imaging (fMRI) provides means to characterize brain activations in response to behavior. However, cognitive neuroscience has been limited to group-level effects referring to the performance of specific tasks. To obtain the functional profile of elementary cognitive mechanisms, the combination of brain responses to many tasks is required. Yet, to date, both structural atlases and parcellation-based activations do not fully account for cognitive function and still present several limitations. Further, they do not adapt overall to individual characteristics. In this talk, I will give an account of deep-behavioral phenotyping strategies, namely data-driven methods in large task-fMRI datasets, to optimize functional brain-data collection and improve inference of effects-of-interest related to mental processes. Key to this approach is the employment of fast multi-functional paradigms rich on features that can be well parametrized and, consequently, facilitate the creation of psycho-physiological constructs to be modelled with imaging data. Particular emphasis will be given to music stimuli when studying high-order cognitive mechanisms, due to their ecological nature and quality to enable complex behavior compounded by discrete entities. I will also discuss how deep-behavioral phenotyping and individualized models applied to neuroimaging data can better account for the subject-specific organization of domain-general cognitive systems in the human brain. Finally, the accumulation of functional brain signatures brings the possibility to clarify relationships among tasks and create a univocal link between brain systems and mental functions through: (1) the development of ontologies proposing an organization of cognitive processes; and (2) brain-network taxonomies describing functional specialization. To this end, tools to improve commensurability in cognitive science are necessary, such as public repositories, ontology-based platforms and automated meta-analysis tools. I will thus discuss some brain-atlasing resources currently under development, and their applicability in cognitive as well as clinical neuroscience.

The return of a sample of near-surface atmosphere from Mars would facilitate answers to several first-order science questions surrounding the formation and evolution of the planet. One of the important aspects of terrestrial planet formation in general is the role that primary atmospheres played in influencing the chemistry and structure of the planets and their antecedents. Studies of the martian atmosphere can be used to investigate the role of a primary atmosphere in its history. Atmosphere samples would also inform our understanding of the near-surface chemistry of the planet, and ultimately the prospects for life. High-precision isotopic analyses of constituent gases are needed to address these questions, requiring that the analyses are made on returned samples rather than in situ.

Since the loophole-free Bell experiments of 2020 and the Nobel prizes in physics of 2022, critics of Bell's work have retreated to the fortress of super-determinism. Now, super-determinism is a derogatory word - it just means "determinism". Palmer, Hance and Hossenfelder argue that quantum mechanics and determinism are not incompatible, using a sophisticated mathematical construction based on a subtle thinning of allowed states and measurements in quantum mechanics, such that what is left appears to make Bell's argument fail, without altering the empirical predictions of quantum mechanics. I think however that it is a smoke screen, and the slogan "lost in math" comes to my mind. I will discuss some other recent disproofs of Bell's theorem using the language of causality based on causal graphs. Causal thinking is also central to law and justice. I will mention surprising connections to my work on serial killer nurse cases, in particular the Dutch case of Lucia de Berk and the current UK case of Lucy Letby.

Earliest Galaxies in the JADES Origins Field: Luminosity Function and Cosmic ...Sérgio Sacani
We characterize the earliest galaxy population in the JADES Origins Field (JOF), the deepest
imaging field observed with JWST. We make use of the ancillary Hubble optical images (5 filters
spanning 0.4−0.9µm) and novel JWST images with 14 filters spanning 0.8−5µm, including 7 mediumband filters, and reaching total exposure times of up to 46 hours per filter. We combine all our data
at > 2.3µm to construct an ultradeep image, reaching as deep as ≈ 31.4 AB mag in the stack and
30.3-31.0 AB mag (5σ, r = 0.1” circular aperture) in individual filters. We measure photometric
redshifts and use robust selection criteria to identify a sample of eight galaxy candidates at redshifts
z = 11.5 − 15. These objects show compact half-light radii of R1/2 ∼ 50 − 200pc, stellar masses of
M⋆ ∼ 107−108M⊙, and star-formation rates of SFR ∼ 0.1−1 M⊙ yr−1
. Our search finds no candidates
at 15 < z < 20, placing upper limits at these redshifts. We develop a forward modeling approach to
infer the properties of the evolving luminosity function without binning in redshift or luminosity that
marginalizes over the photometric redshift uncertainty of our candidate galaxies and incorporates the
impact of non-detections. We find a z = 12 luminosity function in good agreement with prior results,
and that the luminosity function normalization and UV luminosity density decline by a factor of ∼ 2.5
from z = 12 to z = 14. We discuss the possible implications of our results in the context of theoretical
models for evolution of the dark matter halo mass function.
