• CA : Penyimpanan menggunakan konsentrasi O2

• MA : Sama seperti CA tetapi pengendalian tidak

• Suplemen terhadap pengendalian suhu dan RH
• Tergantung komoditi, varietas, umur fisiologis,
komposis udara dan lama simpan
• Penggunaan : Transport, simpan sementara dan
jangka panjang.

• Kepekan terhdap kerusakan lanjutan pada
komoditas yang rusak fisiologis
• Stimulasi sprouting dan penghambatan
perkembangan periderm pada tuber crop

• Efek Menguntungkan

diskolorasi

– Pengurangan dilakukan dengan NaOH, Ca(OH)2,
kapur
• Pembuangan Etilen
– Dengan KMnO4, arang aktif atau arang terbromasi

• Sistem Hipobarik (tekanan rendah)
– Tekanan parsial masing-masing gas berkurang,
mengurangi tension O2 dan memperdepat hilangnya
etilen
• MAP (Modified Atmosphere Packaging)
• MA Pasif : Jika karakteristik permeabilitas film dan
komoditi sesuai, atmosfer tertentu dapat diperoleh
dengan konsumsi O2 dan produksi CO2. Harus cepat
terbentuk dan tidak anoksida
• MA Aktif : Ambil gas dari package dengan vakum dan
ganti dengan campuran gas yang dikehendaki. [gas]
dapat disesuaiklan dengan menangkap/menetralisasi

is a process for packaging foodstuff together with
a gas or a gas mixture containing protective and
