Water has unusually high boiling point and other unusual properties compared to other small molecules due to its polarity and ability to form hydrogen bonds between molecules. Sea water tastes salty because it contains dissolved salt ions like sodium and chloride ions, while river water does not contain as much dissolved salts. Graphite is soft while diamond is very hard due to the type of carbon bonding - graphite has layered bonding while diamond has each carbon strongly bonded to four other carbons in a tetrahedral structure. Sodium is extracted through electrolysis of molten sodium chloride, with chlorine gas being the other product.
