Amylase is the name of a group of enzymes that break starch down into smaller molecules like
maltose or glucose (Encyclopedia Britannica, 1998). ⍺ amylase is the amylase that is found in many
mammals, including humans, in whom it can be found in saliva or the small intestine (Encyclopedia
Britannica, 1998). As this is such an important topic for the world, many studies have been done to
investigate the effects of pH on amylase. Two such experiments, one by Supannapong et al., and one

activity of amylase and the amount of glucose in the solution, until the amylase became denatured to

The purpose of the experiment is to measure the level of browning, due to the effects of the enzyme
called polyphenol oxidase (phenolase), on apple slices exposed to different Ph. levels.
When exposed to oxygen the enzyme catalyzes the reaction creating melanins (brown pigments) on
the fruit. Soaking the apple slices in acetic acid, orange juice (ascorbic acid), tap water and calcium
carbonate (alkaline) will affect the rate in which the apple slices brown. The reduction of the browning
is dependent on the Ph. levels of the soaking solutions, also soaking the apple slice in water will
restrict the amount of oxygen that comes into contact with the apple thus temporarily inhibiting the
effects of the phenolase.
Understanding the Prac:
By peeling or cutting fruit and vegetables the enzymes that are stored within the plant cells are
released. When in the presence of oxygen the enzyme phenolase catalyzes the biochemical reaction of
converting phenolic compounds into melanins. Enzymatic browning occurs optimally between a PH
of 5.0 and 7.0.
Browning can also occur via the bruising or other injury to the plant tissue, exposing the enzyme to
oxygen. Although enzymatic browning is not always a defect, for instance it is required in the process
of making raisins, coffee, prunes and cocoa, it does however have significant effects on the fruits and

Velazquez was born in 1599 and died on August 6th, 1660 whereas Picasso was born on October 25th,
1881 and died on April 8th, 1973. Therefore you can tell that there will of course be some differences
in their paintings especially the meaning behind them because they were born in separate time periods.
Both were fairly old, Velazquez was 61 when he passed away and Picasso was 92. Velazquez was 57
when he made this painting so his life was coming close to an end, whether he knew it or not. It could
have influenced his perspective on the painting. Picasso was 70 when he did his first rendition of Las
Meninas so by that time he had done a lot of artwork and still had some life left, so his experience and

The painting brought Wood almost instant fame after being exhibited for the first time at the Art
Institute of Chicago in 1930. It is probably the most reproduced and parodied works of art, and has

The echo of verticals in this painting is also strong. The faces and bodies of the figures seem to be
stretched, and narrowed. The pitchfork s slender prongs and the green stripes on the man s shirt also
add to the elongation of their frame. The copious amounts of vertical wood boards that make up the
house and the barn, keep the viewer s eye moving up and down the picture plane. Wood s use of
verticality in this painting is overwhelming. There is also a striking luminosity to the painting. The
man and the woman s faces appear to slightly glow, as if you can really see the reflection of the sun
beaming off of their skin. This was achieved by a complex method of applying glazes. Wood would
apply a layer of oil paint, allow it to dry, and then varnish it. This tedious process would be repeated

The Aztecs even managed to defeat the Spaniards on what is now considered La Noche Triste, when three quarters of the twelve hundred Europeans in Mexico City died; this is considered the greatest indigenous victory in all the conquest wars to this day (Wright 1992:43). The one factor that the Aztecs did not have to their advantage was biology, specifically disease, and this would prove to be their downfall. The subject then became controversial when more Mexican nationals, desperate for work, were willing to take on these backbreaking jobs at wages most Americans weren t willing to work for. American farm workers had reason to be concerned that the braceros would be competing with them for the same jobs but at lower wages. The original concept of the Bracero Program was to serve and protect both Mexican and domestic workers. For example, Americans would receive at least the minimum wage in the area of the current work; guaranteed employment for three fourths of the contract period; adequate, sanitary, and free housing; food provided at a low cost; job insurance would be at employer s expense; and free transportation back to Mexico was provided when the seasonal contract was up (Bracero History Archive, 2017) . The agriculture employers were also only supposed to hire braceros when there was high labor shortage, and were not to abuse the system.
