Bread is a household staple for most families in Nigeria, formulated from flours of wheat. Depending on the location, supermarket or fast-food; bread exist such as Ofoma-bread, Agege-bread, Ebeano-bread, Crunchies-bread, Tantalizers-bread, or Mr Biggs-bread. Although, other flavoured or filled bread exist in the market such as; cake bread, chocolate, milk or butter bread, coconut bread and sardine bread; The additions of flavour, filling, and or spices or dried fruits is not new to commercial bread making. These additions forms part of the bread name, distinguishing it from several other brands in the country.
For pilot studies, bread can be produced with the pulp or albedo of sweet oranges. Sampling such bread as new product developed for the Nigerian market, presently may not trade. This is because of our food culture and style of cooking. All the same, Nigerian’s are known for food recipes, healthy and delicious meal plans which are rich in fruits and vegetables; orange peels or pulps are not known to form part of the ingredients in those recipes. This is because, the skin of sweet oranges is considered as waste and discarded as such.
The use of sweet oranges peels and pulps whether fresh or dry serves to reduce wastes at home, market and commercially in the fruit juice industries run in Nigeria. The creating of by-products from these waste would generate new raw material for other areas, thus up scaling revenue for such industries; with upstream products generating more sales channels. Ergo, the need to turn these wastes to ingredients that can be easily added to meals, drinks or bakery products in the country.
Pectin is a versatile by product produced commercially from fruits and some vegetables. Pectin’s have been produced from multiple waste streams and single waste residues. The uses of pectin industrially is trendy to thickening agent in jam making, improver in bakery products, stabiliser in house-hold supplies like toothpaste, hair gels, face and body lotions. Thus increasing the market for pectin in the International Trade market.
The use of orange pectin has been investigated by Correa et al. (2011) as an additive in bread production.

Due to continuous efforts of ICAR-NRC on Mithun, Medziphema, Nagaland, this unique species is getting popularized. More and more framers are adopting a semi-intensive rearing model developed by ICAR-NRC on Mithun. If reared scientifically on a commercial scale, Mithun husbandry can fetch good income for the farmers and help in doubling farmers' income.
