Food processing
Food processing is any method used to turn fresh
foods into food products. This can involve one or a
combination of the following: washing, chopping,
Pasteurisation, freezing, fermenting, packaging
and many more.
Food processing also includes adding
components to food, for example to extend
shelf life, or adding vitamins and minerals to
improve the nutritional quality of the food
(fortification).

Packaging is the science, art and
technology of enclosing or protecting
products for distribution, storage, sale, and
use. Packaging also refers to the process of
designing, evaluating, and producing
packages.
The main aims of packaging are to keep the food in
good condition until it is sold and consumed, and to
encourage customers to purchase the product.
Packaging performs five main
functions
· It should provide a barrier against dirt and
other contaminants thus keeping the product
clean and it should prevent losses.
· It should protect food against physical and
chemical damage. For example the harmful
effects of air, light, insects, and rodents.
·
The package design should provide protection and
convenience in handling and transport during
distribution and marketing.
It should help the customers to identify the food and
instruct them how to use it correctly.
It should persuade( induce) the consumer to purchase
the food.
Types of Packaging Materials
Plastics
Plastics are relatively cheap, light, easily
processed and shaped, and easy to seal.
Two major drawbacks are their permeability to
gases and vapors , and the possibility of their
interacting with the product.
Metals (Steel, Tin, Aluminum)
The principal advantages of metal cans are their strength
providing mechanical protection, effective barrier
properties, and resistance to high temperatures providing
stability during processing.
disadvantage in that contents are: invisible, heavy
mass, high cost, and tendency to interact with contents
and environment (internal and external corrosion)
Glass containers used to be and still are considered
a prestigious means of packaging, and serve for the
most expensive wines, liqueurs, perfumes, and
cosmetics.
It is highly inert, impermeable to gases and vapors,
and amenable to the most diverse shaping. It is an
excellent oxygen barrier and completely neutral in
contact with foods
Why We Use The Glass For
Alcoholic drink
Glass is impermeable to
O2 and CO2, hence the
spirits can be stored in
the glass bottles for a
longer duration.
Pasteurization: Plastic
bottles tend to warp under
the pasteurization process
while glass bottles don’t.
•The principle differences between paper,
paperboard, and fiberboard are thickness and use.
The main advantages of paper are its low cost, low
mass, relatively high stiffness, and excellent
printability. The basic raw material for papermaking is
cellulose.
The main disadvantage is its high sensitivity to
moisture, reflected in close dependence on the relative
humidity of the environment.
