Executive Steward
 As an Executive Steward I am responsible for the following:
- To forecast future events and coordinate with the Banquet Culinary team to ensure equipment
and staffing needed is organized.
- Order cleaning chemicals, china, flatware, and glass ware for the banquet area as well as all the
property outlets.
- To ensure the stewarding team members are trained properly on the chemicals we use on a daily
bases and that we are following the EcoLab procedures properly to maintain a sanitized and safe
work area.
- Create systems to maintain Hilton standards,consistency,and efficient team members to control
labor overtime.
- Maintain an organized check book on monthly budgets forequipment being ordered.
- Conduct monthly team member meetings to ensure a clear communication on new standards and
updates on the Hilton Company Policies.

Banquet Captain
 As a Banquet Captain I am responsible for the following:
- Read my BEO (Banquet Event Order) thoroughly to have a full understanding ofwhat the event
lintels and go over the event with the Catering Manager assigned.
- Create a game plan on how to run the function.
- Create a room diagram, buffet/table diagram, line-up, stewarding pull sheet and a back aisle strike
sheet.
- On the day of the event it is my responsibility to walk the room, check the equipment needed,and
check with the banquet kitchen to make sure all the food needed is prepared and correct. At that
point I make the work packets for the servers if there are no changes.

- When the servers arrive I have a line up/ huddle to cover the event and any other information
needed.At that point I supervise the setup of the event,run the event, and supervise the break
down.
- After all the duties of the event are completed I complete a “Captains Report”, post the check, and
scan the forms to the designated people.
