Il mecenatismo è il sostegno ad artisti e
intellettuali che accettano di porre la
propria opera al servizio dei propri
benefattori, dando prestigio alle loro
corti.
Tra gli esempi più noti di mecenatismo,
vi è quello dei Signori di Firenze, i Medici,
in particolare di Cosimo e di suo nipote
Lorenzo il Magnifico, i quali accolsero
nella loro città i migliori artisti, letterati,
umanisti e filosofi del tempo.

10. A Milano il condottiero Francesco Sforza, che
aveva preso il comando della città alla morte di
Filippo Maria Visconti, si era prodigato nel farla
risorgere in tutto il suo splendore.
Il nuovo signore aveva investito molti danari
per crearne una immagine politica
consolidata, richiamando alla sua corte i
migliori architetti, ingegneri, pittori, letterati,
medaglisti e setaioli italiani. Si era preoccupato
di promuovere la lavorazione della seta e la
città era famosa per i suoi velluti, i damaschi, i
broccati intrecciati con fili d’oro e d’argento.
Aveva a cuore la ricostruzione del Castello,
che sarebbe servita sia ad abbellire, sia a
garantire la sicurezza cittadina.
Aveva altresì intrapreso la costruzione del
naviglio della Martesana, per collegare all’Adda
Milano e da Milano proseguire fino al fiume

12. Il banchetto era per il Signore l’occasione per mostrare
pubblicamente la propria grandezza: doveva stupire i
commensali, far sembrare tutto eccezionale, meravigliare ...
Era una girandola di suoni, di colori, di fantasia, di magnificenza.

13. Le tavole erano imbandite con meravigliose
tovaglie di lini ricamati e sovrapposte, su cui
spiccavano eleganti piatti e cristalli colorati
di raffinata fattura. Alla fine di ogni servizio
la tovaglia sovrastante veniva tolta e i
commensali si lavavano le mani in bacili di
argento contenenti acqua di rose.
Anche i tovaglioli erano presentati in svariate
fogge, assumendo forma di galli, tartarughe,
barche o corone, o dalle candide piegature
liberavano uccelletti vivi che lasciavano stupiti
i commensali.
Il sale e le spezie erano contenute in preziosi
contenitori istoriati.
Sulle credenze brillavano arredi in argento e
oro, brocche, bacili, mesciacqua, candelabri e
tutto il tesoro della casata.

14. Si assisteva ad una interminabile sfilata di
portate, dove si alternavano i servizi di
credenza, per lo più di piatti freddi, a quelli
di cucina, con piatti caldi appena preparati.
Le carni di vitelli, montoni, cinghiali, capretti,
agnelli, cacciagione, uccellagione erano
presentati ricoperti della loro pelle o delle loro
piume, disposti come fossero vivi.
I pavoni erano ritti, con tutte le penne e la
coda aperta in una grande ruota

15. Molti animali erano offerti in grandi
pezzi posti su vassoi, in conche di
zucchero decorate, e ricoperti di
lamine d’oro.
L’oro si riteneva avesse doti
benefiche, che donasse forza e
vigore.
Venivano anche preparati dei
“ pasticci volativi”, contenenti
quaglie vive che al momento
stabilito venivano liberate con
grande stupore dei presenti.

I COLORI A TAVOLA
Importante era nella presentazione
dei piatti l'aspetto cromatico. Tutto
doveva essere colorato, vivace,
luminoso.
I cibi venivano colorati con spezie
e aromi.
Con il prezzemolo e le “ bone
herbicine” si preparava la salsa
verde, lo zafferano colorava di
giallo e dava sapore a piatti a base
di riso, carne bianca, pesce,
pollame e vitello; l’uva e i frutti
rossi davano la tonalità vermiglia,
le mandorle il bianco.

Ad allietare i commensali,
tra un servizio e l’altro,
intervenivano musici con
viole e liuti. Molte volte a
loro era riservato un vero e

Nel menù del Quattrocento la
carne rimane l'alimento
principale della tavola: era il
piacere per eccellenza dei
signori.
Rispetto alla cucina medievale
meno importanza viene data
alla carne di cacciagione, di
pelo e di piuma.
Si preferiscono preparazioni a
base di animali di allevamento,
come il maiale, e animali da
cortile, come galline, colom-
bacce, piccioni, vitelli, capre e
pecore.
La più pregiata era la carne di
pavone, che suggeriva un'idea
di leggerezza e di grande
gloria.

LA PASTA
Sulle tavole dei ricchi c’era una
abbondante varietà di paste
tirate e farcite . La pasta secca a
lunga conservazione , chiamata
“vermicelli” o “maccaroni “ la cui
origine era attribuita agli arabi,
veniva servita come contorno
ad altre vivande e specialmente
con la carne .
Il riso era cotto a lungo nel latte
“a menestra” con aggiunta di
zucchero e spezie.
Vi erano poi paste ripiene di
carni, torte e pasticci in crosta.
A Napoli e a Genova, in Puglia
e in Toscana nel XIV secolo
vennero costituiti le prime
corporazioni di pastai

LE MANDORLE
Nella cucina rinascimentale si
faceva largo uso delle mandorle.
Venivano largamente usate nei
periodi di magro (1/3 dei giorni
dell'anno erano di magro) in cui
potevano sostituire il consumo di
latte
Inoltre si potevano conservare
facilmente, contrariamente alla
maggior parte degli altri cibi.
Proprio per la loro importanza
nell’alimentazione del tempo, i
mandorli erano presenti in
grande numero in Brianza fino
all'800, ei loro frutti sono stati la
base di molte ricette e di dolci,
come il torrone creato nel 1400 e
l'amaretto nato nel 1200.

Con la conquista nel 1453
di Costantinopoli da parte
dei Turchi Ottomani si
interrompono i traffici
delle spezie provenienti
dall’Oriente.
Per esaltare le essenze dei
cibi i cuochi di corte devono
ingegnarsi con quanto
hanno a disposizione e
introducono così l'utilizzo
delle “bone herbicine”,
come la salvia, il rosmarino
e l'origano, fino ad allora
utilizzate per lo più come
piante officinali.

Grazie alle scoperte geografiche
arrivano poi nuovi ingredienti.
Alcuni sono subito bene accolti,

ornamentale.
