What does "organic" mean?
"Organic" farming relates to agricultural production systems that seek
to provide the consumer with fresh, tasty and authentic food while
respecting natural life­cycle systems.
Typical organic practices include: strict limits on chemical pesticides
and fertilisers, appropriate livestock farming practices (e.g. free range
or open air systems, primarily organic feed), a strict ban on the use of
Genetically­Modified Organisms, limits on processing aids and food
additives.

In February 2012, new EU rules for “organic wine” have been agreed in
the Standing Committee on Organic Farming (SCOF).
Organic wine growers are allowed to use the term “organic wine” on
their labels. 
The labels must also
show the EU­organic­
logo and the code
number of their certifier,
and must respect other
wine labelling rules.

The regulation identifies oenological techniques and substances to be
authorized for organic wine.
These include: 
* maximum sulphite content set at 100 mg per
litre for red wine (150 mg/l for conventional)
* 150mg/l for white/rosé (200 mg/l for
conventional),
* with a 30mg/l differential where the residual
sugar content is more than 2g per litre.

TTB recognizes four different types of “ORGANIC” claims:
* 100% Organic—the product’s ingredients are all (i.e., 100%) organic
and the product does not contain chemically added sulfites;
* Organic—the product contains at least 95% organic ingredients and no
chemically added sulfites;
* “Made with Organic [Ingredients, i.e., grapes]“—the product contains at
least 70% organic ingredients (and may contain chemically added
sulfites); and
* If the product contains less than 70% organic ingredients or if the
product is not certified by an organic certified, the product may only
include organic ingredients in its ingredient statement.

7 CFR 205.200 ­ General:
The producer or handler of a production or handling operation intending
to sell, label, or represent agricultural products as “100 percent organic,”
“organic,” or “made with organic (specified ingredients or food group(s))”
must comply with the applicable provisions of this subpart. Production
practices implemented in accordance with this subpart must maintain or
improve the natural resources of the operation, including soil and water
quality.

* harvesting with higher acids. Low pH values in wine are
preferred for many reasons. They give wines their fresh taste,
improve microbial stability, reduce browning, diminish the
need for SO2

* CO2 in the form of dry ice is used to cool
down grapes and must to help prevent
spontaneous fermentation by wild yeasts
* plant proteins for wine clarification, which
also allow consumers who, due to
religious or cultural reasons, do not eat or
drink product from animals

"Organic" farming relates to agricultural production systems that seek to provide the consumer with fresh, tasty and authentic food while respecting natural life­cycle systems. Typical organic practices include: strict limits on chemical pesticides and fertilisers, appropriate livestock farming practices (e.g. free range or open air systems, primarily organic feed), a strict ban on the use of Genetically­Modified Organisms, limits on processing aids and food additives.

Organic wine growers are allowed to use the term “organic wine” on their labels.  The labels must also show the EU­organic­ logo and the code number of their certifier, and must respect other wine labelling rules.

Copenhagen | Linda Wine Reviews Law in the USA TTB recognizes four different types of “ORGANIC” claims: * 100% Organic—the product’s ingredients are all (i.e., 100%) organic and the product does not contain chemically added sulfites; * Organic—the product contains at least 95% organic ingredients and no chemically added sulfites; * “Made with Organic [Ingredients, i.e., grapes]“—the product contains at least 70% organic ingredients (and may contain chemically added sulfites); and * If the product contains less than 70% organic ingredients or if the product is not certified by an organic certified, the product may only include organic ingredients in its ingredient statement.
