This document provides guidelines for conducting health assessments at slaughterhouses. It describes common conditions found during inspection including types of pneumonia (acute, chronic, catarrhal), pleurisy (grades 1-2), pericarditis, enzootic pneumonia, atrophic rhinitis (grades 0-4), nephritis (grades 1-2), ileitis, ascariasis (grades 1-2), sarcoptic mange (grades 1-3), and includes sample forms and guidelines for monitoring programs at slaughterhouses. Key data collected includes disease presence and grade, prevalence rates, sample sizes needed for different acceptable error rates, and duration of infections prior to slaughter.
