It is the conversion of complex chemical
substance into simple chemical substance by
the action of micro organisms to make new
products.

Q.Why does milk turn into curd
more quickly when left at room
temperature than when in a
refrigerator?
12. In the refrigerator the bacteria
'lactobacillus', which turns the milk into
curd, remains inactive as the bacteria are
active in normal or medium-high
temperature. And when the milk is left in
the open, the bacteria remain active and
set the milk into curd faster.
13. Amazing fact:
Adding yeast to the dough before it is baked
makes bread softer.
The yeast uses some of the nutrients in the dough
for respiration .
This releases bubbles of carbon dioxide gas which
make the bread soft and sponge.
15. It is easy to grow microbes in large quantities
as they grow quickly when given the right
temperature and food supply.
Microbe cells are simple in structure so it
makes it easier for scientist to genetically
engineered new microbes for specific work.
