Όταν βγάζουν το τυρί μένει ένα υγρό ελαφρά κιτρινωπό . Αυτό λέγεται χουμάς!
Το χουμά το χρησιμοποιούν οι βοσκοί για να φτιάχνουν τη Μυζήθρα, αλλά και για να πλένουν τα τυριά όσο βρίσκονται στη τάβλα ή το έδιναν ως τροφή στα γουρούνια που ανέτρεφαν. Τίποτα δεν πήγαινε χαμένο!!
