OWNER and FOUNDER
Heritage Consulting was created to provide Dunkin’ Donuts, Subway, and Best Western franchisees
ongoing consultation, advice, and calibration of their Network. I optimize the Franchisee's ability to
grow their business through restaurant management development, exceptional guest service, and by
supporting the strategies, tactics and objectives of the Franchisor. Proactively seeks opportunities to
raise the bar within the Franchisee's Network with regards to work processes, systems, products,
guest service, and management staff effectiveness. Provide clear, consistent communication on a
frequent basis with the Management, staff, Franchisee, and the Franchisor’s representative. Provide
leadership and oversight for all training activities within the network, including training plans for each
restaurant.
Selected Achievements
Under a Development Agreement with an existing Subway franchisee to develop a new
market to construct and open 8 Subway restaurants in FY 2012. We handled ALL facets of the
construction process from lease signing to grand opening of all restaurants.
Each Dunkin franchisee client has successfully developed, constructed, and opened 2 new
restaurants that created additional profit and equity.
Improved the clients’ infrastructure and organization through “Train the Trainer” method of
training and shared experiences in the industry
Dunkin’ Brands, Inc., Canton, MA (2002 –2009)
DIRECTOR OF DEVELOPMENT
Direct all development aspects of new Dunkin’ Donuts restaurants in the key states of New Jersey,
Pennsylvania, and Delaware. Manage a staff of four Construction Managers and five Development
Managers with responsibility to approve site selection, lease and finance arrangements, contractor
selection and performance, and the hiring and training of new employees. Skilled in one-on-one
client relationship and resolving issues related to building new restaurants in proximity to existing
restaurants, or rejecting potential franchisees that do not meet Dunkin’ Brands’ standards. Develop
advertising, promotional and marketing strategies appropriate for the geographic territory.
Selected Achievements
Led an expansion in the region by adding 92 restaurants in fiscal year 2007 and 77
restaurants in fiscal 2008 ranging in size from 400 to 3,000 square feet. Total New First Year
sales increased by $32 million in fiscal 2008.

New World Holdings, Inc., Eatontown, NJ (1995 - 2002)
VICE PRESIDENT OF FRANCHISE SERVICES
Oversaw all day to day operations of the largest bagel and coffee chain, including Manhattan Bagel,
Chesapeake Bagel, New World Coffee, and Willoughby’s Coffee. Created standard operating
procedures and systems that increased the efficiency of the company during its period of rapid
growth. Integrated different corporate structures, cultures, and branding into a single cohesive
system.
Selected Achievements
Successfully helped lead the company through bankruptcy in one year, selecting a new
management team, streamlining operations, and working closely with bank overseers.
Travelled across the country meeting with franchisees enlisting their support through the
bankruptcy.
Initially hired as District Manager of Manhattan Bagel, was promoted 3 times, and given
increasing levels of responsibility leading up to position of Vice President. The company went
through five mergers and grew from $16 to $194 million in franchise revenues.
Expanded the company from 90 franchised restaurants adding new restaurants at the rate of
ten stores per month as the company grew to 485 restaurants.
T.J. Cinnamon’s, Inc., Secaucus, NJ (1994 – 1995)
DIRECTOR OF OPERATIONS
Complete control of daily operations supporting the franchise system of the original cinnamon roll
company. Analyzed all process systems in a rapidly growing business introducing methods to
successfully reduce operating expenses and improve profits. Identify and implement changes to
existing policies and procedures on a continuous basis.
Selected Achievements
Totally redesigned the operating control systems of the company and of the franchises
including inventory, P&L format, and cash and payroll controls.
Developed a sales analysis program for field managers to use to help the franchisees. Led
the development of a specialty coffee program that diversified the product line.
Managed purchasing and distribution systems for all products, negotiating long-term
contracts at the best available pricing in the industry.
Dunkin’ Donuts, Inc., Randolph, MA (1981 – 1994)
DEVELOPMENT MANAGER, (1992 – 1994)
Managed the growth and development of the Baltimore/Washington markets. Supervised the new
restaurant development procedure and coordinated all documentation and fees between the
franchisee and the company. Promoted numerous times, starting at entry level in an individual
restaurant.
Selected Achievements
Mapped and sold 11 Exclusive Development Territories resulting in $185,000 in new franchise
revenue.
Managed the development process from site selection, hiring the architect, submission of
building plans, through site approval for 11 satellite and two full producing locations.
Prepared the development portion of the company’s 1995 to 1997 Tactical Market Plan for the
Baltimore/Washington markets.
FRANCHISE DISTRICT MANAGER, (1984 – 1992)
Responsible for all aspects of running the business in the district including profit and loss,
marketing, sales, brand awareness, and corporate growth. Financial management of capital
