Though India has a low per capita ice cream consumption of 300 ml
per annum, the trend is slowly changing due to a number of reasons.
DARE explores the dynamics of the business.
Indian summers are synonymous with ice creams. Come summers,
and you will see a number of colourful.
Pushcarts selling the choicest of ice creams in numerous flavours
from the traditional vanilla and chocolate to unusual varieties like
Mother Diary’s Shahi Nazrana. If that doesn’t baffle you then the ice
cream range definitely would, for example the ice cream range for the
children would be entirely different from that for the teenagers or for
that matter adults. Or, for those who like to have ice cream in peace,
there are a number of ice cream parlours that are opening shop.
But did you know that a 100 ml scoop of your favourite ice cream
that you ordered may contain up to 50% air! This makes the business
a highly profitable venture to get into – sometimes, the profits can go
upto 100%! However, there are several challenges to this business as
well. In this story, DARE attempts to find out the dynamics of the
business.

In 1944, a young professional, Satish Chona, started an ice cream
shop, by the name of Havmor, in Karachi in 1944. Initially it began as
a part time venture to supplement the family income.
The subsequent three years saw it becoming a popular local brand.
But in 1947, in the wake of the India-Pakistan partition, he was
forced to leave everything behind and migrate to India. He tried
setting up a new venture in couple of Indian cities- Dehradun and
Indore butthen ultimately settled in Ahmedabad. Starting from
scratch, Satish Chona began operations from a handcart at the
Ahmedabad railwaystation, churning out ice-cream manually. He
called this fledgling brand HAVMOR- a short form of Have More-
promising the customers more value for money and more taste to
relish. Achhai, Sachhai and Safai (Goodness, Purity/honesty and
hygiene) were the guiding values that endure to date.

From the Present to the Future
The West was won by taste, innovation and quality. In the last
six decades, from a handcart, Havmor has grown into a delicious
facet of daily life of a large part of Western India. It is available
through 20,000 + outlets across Gujarat, Maharashtra, Rajasthan

Havmor has more than 160 products, possibly the most
extensive range in India. The Company has 200,000 liters per
day, ISO 22000:2005 and HACCP certified state-of-the-art
manufacturing facilities. In the next two years the capacity is
planned to double. The existing Group turnover is Rs. 2.3 billion
which is expected to cross Rs. 3 billion by 2012-13.
The third generation- Ankit Chona- is contributing to the
business, building on the core values. He is the driving force in
expanding the Restaurant Division as well as popularizing the
Company owned Ice cream and Fast Food Parlors- Hav Fun. He
is leading the modernization and standardization process of the
Company.

2.1 What is production?
“Production is a process of conversion of raw material

resources.”
And the production process is the combination of

collectively are said as process.

Pasteurization:
The word “Pasteurization” has been named of the name
of the eminent French Scientist, Louis Parture, who
studied that heating of liquid, to a high temperature
considerably improves their keeping qualities. This
process is widely employed in almost all the dairy
operations, in general the word “pasteurization” can
not the heating of milk & milk products to a
temperature which destroys almost all the micro
organization present and that too without significantly
affection the properties of these products.
The milk is warmed nicely and from it milk cream is
produced. Because milk is refined and tested nicely
from the dairy only no need to be tested it. Making
cream add needed dry fruits and sugar, Stabilizers and
chemicals in it. Sugar is mixed in milk while
warming. Cleaning of dry fruits and cutting is done by
over machine very nicely.
They make different varieties by ice cream by different
process.
They pack than nicely and store in cold storage at –
25% Celsius to –30% Celsius.
