An emulsion is an unstable biphasic system consisting of two immiscible liquids, with one liquid dispersed as small particles in the other liquid. There are two main types of emulsions: oil-in-water (o/w) and water-in-oil (w/o). Emulsions are stabilized using emulsifying agents with both hydrophilic and lipophilic parts, such as acacia, tragacanth, sodium alginate, agar, and pectin. Surfactants are compounds that lower the surface tension between liquids and solids, and are used as emulsifiers. Types of emulsion. :
5. An emulsion in which oil is the dispersed phase
is oil , and an aqueous solution is the continuous
phase.
Example Milk, vanishing cream is an example
of (o/w) emulsion.
2- Water in oil. (W/O).
An emulsion in which dispersed phase is water,
and continuous phase is oil.
Example butter is the example.

6. Emulsion are stabilized by adding an emulsifier
and emulsifying agent. These agent have both
hydrophilic and lipophilic part in their chemical
structure.
Emulsifying agent are –
1-Acacia.
2-Tragacanth.
3-Sodium alginate.
4-Agar.
5-Pectin.

7. Surfactants are compounds that lower the

2- Cationic.
3- Non- ionic.

8. Types :
1-Anionic – Inaqueous solution, these ionize into a large anion,
responsible for their emulsifying ability, and asmall cation.
2-Cationic – In aqueous solution , these ionize into a large
cation, responsible for their emulsifying ability, and a small
anion.
3- Non-ionic – These do not ionize in aqueous solution.

2- Wet gum method.
Preparation of emulsion.:
15. Acacia is placed into mortar Acacia is placed in mortar.
Which is already filled with oil
Add 25 ml. water & triturate it,
Lump are removed by trituration. To form mucilage.
After ten sec. add liquid paraffin Continuous trituration add
liquid paraffin.
Add 25ml. Water and triturate it
Than add oil in this mucilage
Until Emulsion is formed. Mixture.
Triturate it, and Emulsion is
formed.
