Cinnamon Sugar Popcorn (Elise Morales)<br />Ingredients<br />1 cup unpopped popcorn <br />1/3 cup butter <br />2/3 cup white sugar <br />2 teaspoons ground cinnamon <br />1/2 teaspoon salt <br />1/2 teaspoon vanilla extract<br />Directions<br />Preheat an oven to 250 degrees F.  <br />Pop the popcorn using an air popper according to manufacturer's directions. (My air popper makes 1/2cup at a time. About 12cups total.) Place into a very large mixing bowl, or two large bowls and set aside.  <br />Melt the butter in a small saucepan over medium-low heat with sugar, cinnamon, salt, and vanilla. Cook and STIR until thick and bubbly, making sure sugar dissolves.  <br />Drizzle over the popcorn and toss to coat. Spread the popcorn into a large roasting pan. <br />Bake in the preheated oven 10 minutes, then turn the heat off, and allow the popcorn to stay in the oven 20 minutes longer.<br />The extra step of baking the popcorn is worth the wait!<br />
