Apple, Walnut & Gorgonzola Salad with Cranberries
1. Apple & Gorgonzola Salad (Joy Veldcamp)<br /> <br />Ingredients: (I don't have any measurements I just eyeball it)<br />Romaine Lettuce<br />Granny Smith Apple, cut in long, thin slices<br />Chopped Walnuts (I sugar mine)<br />Dried Cranberries<br />Gorgonzola cheese (or feta works as well)<br /> <br />Vinaigrette:<br />1/2 cup white wine vinegar<br />3/4 tsp dried oregano<br />1/2 tsp dry mustard<br />1 tsp salt<br />1 pinch black pepper<br />1/8 cup red onion, chopped fine<br />1.5 tsp minced garlic<br />3/4 cup olive oil<br /> <br />Combine vinegar, oregano, mustard, salt and pepper in blender/food processor. Add onion and garlic. Blend together while SLOWLY adding the olice oil (that's very important--it helps make the vinaigrette thick, not gross and watery). Let vinaigrette sit at room temp for at least 30 minutes before serving. <br /> <br />Toss romaine lettuce with vinaigrette. Top with apple slices, walnuts, cranberries and gorgonzola cheese. <br />
