Cranberry-White chocolate chip cookies…What to do with those things Preheat oven to 375 degrees Fahrenheit. Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour,  baking soda, and salt in a separate mixing bowl. Add to butter mixture, mixing well after each addition. Stir in dried cranberries and white chocolate chips or chunks.

Pumpkin Pancakes…What you need Pumpkin Pancakes ½ cup unbleached all-purpose flour ½ cup whole wheat flour 1 tablespoon baking powder ½ teaspoon salt 1 tablespoon light brown sugar 1 egg ¾ cup milk (any kind) ½ cup pumpkin puree 1 tablespoon butter, melted ¼ teaspoon cinnamon
Pumpkin Pancakes…What to do with those things Melt butter over stovetop. Don’t let it burn. Set aside to cool. In a separate bowl beat together eggs, milk, pumpkin puree and add the cooled butter. Set aside. In a large bowl mix together the flours, baking powder, brown sugar, cinnamon. Add the egg mixture but don’t mix. Drop by the spoonful into a preheated non stick griddle or skillet. Cook over medium-high heat until bubbles appear on the surface. turn once; cook on the other side. Serve immediately. Makes about 8-10 pancakes.
