the customers and cater to their needs. And
those in the education sector have been constantly
improvising ways to include knowledge and training to
meet the constant demands of the changing market
scenario.
Only such institutes providing education in hospitality
management can survive the test of times. The need for
grooming students in the face of adversities became
pronounced in the past one year and institutes have
been doing remarkably well in this regard.
The food and the tourism industry had been seeing an
upward swing in the past couple of decades or so and
with this rose the demand for educational institutions to
groom the future hospitality professionals as per the
requisites of the global trends.

The past one year has seen uncertainty in the
economic performance of the hospitality business that
was doing great until the pandemic. But this has also
given rise to improvise ways and means to set the ball
rolling post-lockdown.
While those in the hospitality business have adapted to
the new normal and have introduced certain
procedures mandatory to maintain hygiene and
distance, hospitality educational institutes swung into
action and began incorporating ways and means to
train their students in the face of any crisis.
The hospitality business has been impacted severely
by the global pandemic that shook the world a year
ago. Across the world, the academic curriculum of the
hospitality institutions are being re-constructed and
polished to address the concerns of the future travel
needs, safety protocols and environmental regulations.
But the latter half of this year looks bright for the
tourism industry with the vaccination being
administered. Hotel industry has opened up, albeit with
all the safety and cleanliness guidelines prescribed by
the government. The same is true with the tourism
industry. After tremendous losses in 2020, the industry
is now gearing up to meet the demands of travel
enthusiasts and food lovers.
Hospitality courses are focusing on the need to
change with the demands of the changing times and
according to World Travel and Tourism Council, the job
market is also expected to see a rise this year.
We, at The Knowledge Review, have come up with
some of the best institutions grooming the future
hospitality managers. For the cover story, we have

BBA in Hospitality and Facilities
Management is a pioneering
undergraduate course in PUMBA as
well as in our country. The course is
provided with its own infrastructure
and specially designed comprising of

Savitribai Phule Pune University
(SPPU), formerly known as University
of Pune (UoP) is located in the centre
of Pune city and is a prestigious

February 10, 1949, SPPU has been

Management (HFM).
BBA HFM is a pioneering course
commenced in 2018 and has added to
the bounty of PUMBA by providing

learners, paving them a path to success
and add to knowledge and make a
difference globally.
Dr Prafulla Pawar, Registrar and
Director of SPPU School of Business,
also former HoD of PUMBA during
his tenure commenced BBA(HFM)
with a vision to offer specialized skills
to join the ever-growing services
industry. In his words "the endeavour
to is to nurture and mentor young
minds and provide our students with
every possible input required to gain a
clear understanding of the
fundamentals of service sector for
enhanced employability." Such

empower the upcoming generations.

BBA(HFM) Course Outcomes –
The Bachelor of Hospitality and
Facilities Management (BBA-HFM) is
a three-year full-time degree course.
BBA in Hospitality and Facilities
Management is a professional
management discipline that focuses on
efficient and effective delivery of
support services to organizations. The
curriculum of the program is crafted to
bridge the ever-growing demand of the
services industry. This course is one of
its kind which provides a distinctive
combination of business administration
with a thrust on study and application
of service management. Varied and
comprehensive elements of retail,
facilities, event, hospitality and
customer relationship management
have been incorporated to enrich the
curriculum. The course prepares
students with analytical,
administrative, interpersonal and
technological skills. It propels high
standards in education and professional
finesse to hone competencies in the
field of management.
In the words of Dr. Surbhi Jain,
Professor and Head of Department of
PUMBA, “The syllabus of three years
of BBA (HFM) includes a plethora of
curricular and co-curricular
activities.” She further adds that "the
course offers a blended system that
amalgamates personalized inputs, with
online and offline delivery".
Importantly, it also offers students to
work in subject specific laboratories
that give them real-life simulation
experience, allowing them to work on
their own and develop skills that open
avenues of corporate placements,
further studies and innovative start-
ups".

The course attracts both Indian and
international students. In the current
academic year of BBA (HFM) we have
an international batch of students from
Sri Lanka, Nepal, Bangladesh, Africa
and Afghanistan, Middle East.
The service industry in India and world
over has been growing steadily over
the past few years. Even through this
pandemic situation, the sector has been
able to recover quite quickly.
Automation has taken over in many
industries including hospitality, facility,
retail operations. However, all service
sectors with a customer interface will
remain being dominated by humans
rather than automations taking over
completely.
The course inputs help students to hone
their personalities and develop a
competitive advantage that holds them
in good stead upon attaining the
degree. Graduating students can select
from an array of work and study
opportunities.
Student Co-curricular and
Enrichment Activities
DR Deepa Prasad Venkatraman course-
coordinator BBA(HFM) said that “We
emphasise on co-curricular and
enrichment activities which bring
holistic development of our students.
Events are conducted by students with
guidance from senior student cell
members of MBA. There are several
cells that a student of BBA (HFM) must
join, contribute and gain from these
invaluable learning experiences, which
bring in a great deal of esprit de corps
among them”.

Cultural Activity
It is responsible for various events
organized by the student body of
PUMBA. Understanding the
importance of social and cultural
activities required for preparing
students for real life and strengthening
their personal skills, the cell puts in the
greatest efforts to create a platform for
students to showcase their vibrant
persona. At PUMBA, the Cultural Cell
emboldens activities that not only
teach students how to work for a
common goal but also to develop a
sense of responsibility.
Communication activity
The students' forum regularly uses
social media as well as print media to
communicate with various
stakeholders. The objective is to
manage as well as promote the
PUMBA brand. This cell makes sure
that the recent developments in the
department reach the outer world from
time to time.
The media team focuses mainly on
student activities, creating content and
flaring it to the appropriate audience.

activity
The Entrepreneurship Development
forum of students is always
enthusiastic to motivate students by
carrying out various entrepreneurial
activities and events. The prime focus
is to develop a sustained platform that
supports students in starting up,
showcasing their skills and structuring
their thoughts in the less explored field
of entrepreneurship and thereby
realizing their ideas and converting
them to reality.
PUMBA Helping Hands (PHH)
PUMBA’s Helping Hands are driven
by social compassion and sense of
responsibility and is a student-led
initiative. Despite having all the cells
which professionally groomed the
students of PUMBA, the department
lacked a platform where students could
give something back to the society.
PUMBA's Helping Hands has tried to
fill this gap with its work. The
activities range from awareness
campaigns to blood donation.
Seminar Activity
It conducts various seminars by
inviting guests from the industry. The
various activities held by this cell help
to get a better exposure of the industry
and guides the students in their future
path BBA HFM conducts many
activities such as seminars, guest
lectures, field visit, competitions
corporate exposure, and webinars.
They celebrate various days such as
Women’s Day, World Tourism Day,
World Environment Day, and other
days important to their industry.
Career Opportunities
The Placement & Corporate Relations
Cell of PUMBA (BBA- HFM) is
entirely operated and managed by
dedicated force students, functioning
under the guidance of the training and
placement co-ordinator Dr. Arati
Prabhu and the department authorities.
The Cell acts as an interface between
the industry and the department with
the primary objective of nurturing a
long-lasting and mutually beneficial
relationship with the corporate world,
and also acts as a facilitator to provide
the right opportunities for the students
at BBA (HFM) course at PUMBA.
The cell maintains an ever-growing
database of the corporate contacts and
closely liaison with each of them. This
helps in better understanding of the
expectations and requirements of the
industry, and serves to fulfil them. The
Placement Cell tirelessly endeavours to
help the students at BBA (HFM),
PUMBA to put their best foot forward
while stepping into the corporate
world.
On completing the course, students
opting for placement will be placed in
top organisations of service sectors.
Eligibility
BBA (HFM) degree is open to all
students who have passed XII from
Science, Commerce, Arts, or
Vocational streams with English as a
subject. The minimum aggregate marks
required are 45% for open category
and 40% for reserved category. This
course is very practical and requires
hands on learning complemented with
theoretical learning.
An all-India online entrance exam is
conducted for Indian students and
merit-based admission for this course
which has a limited number of seats.

Hyderabad. The placement percentage over the last 20
years has been on a growth trajectory.
Right from the year of the first batch passing out of
IIHMCA, the students have been preferred due to their
employability. The right approach in connecting with the
hoteliers and showcasing the talents of students and their
ability to be industry-ready has been the key to IIHMCA’s
success in giving the placement over the years.
Our Placement Record During last Five Years:
In the year 2015, the institute provided 48 International
Placements and 32 placements in Indian Hotels. This
achievement was followed up with successive years, viz in
the year 2016 saw that international placements were 55 in
number vis a vis compared to 28 in Indian Hotels.

Dubai, Fairmont the Palm-Dubai, Happy Cruises-Spain.
Some of the Indian Hotels who have recruited IIHMCA
graduates are The Taj Group of Hotels (IHCL), The Oberoi
(OCLD), ITC Hotels Ltd, Trident Hotels, Radisson Hotel
Group, JW Marriott, Westin, Novotel, Conrad Hilton,
Double Tree by Hilton & Hyatt Hotels.
For the international and national placements, the institute
does not charge any money from the students. The
placements are done purely on merit basis and the
interviews are conducted by the concerned hoteliers.
History
The Indian Institute of Hotel Management and Culinary
Arts - IIHMCA Hyderabad was established in 2001 by well
known hospitality professionals from India and abroad.
The institute is affiliated to Osmania University and
approved by Telangana State Council of Higher Education,
Hyderabad.
Mission
To provide future hospitality industry leaders with the
practical training, educational and cultural awareness, skills
necessary to succeed in today’s global economy while
fostering international goodwill.
Vision
The IIHMCA is committed to providing its students with
theoretical information and practical experience that will
give them strong foundation in Hospitality fundamentals
and hands-on skills which ensures them in developing a
successful career in the hospitality industry.

The nearly 40,000-50,000 sq.ft. area of IIHMCA campus
houses well-equipped culinary labs (kitchens), training
restaurants, front office, housekeeping and computer
laboratories and classrooms.

housekeeping and hands-on restaurant training there is a

basic training kitchen, quantity training kitchen, advanced
training kitchen, cruise galley kitchen, bakery and
confectionery, advanced bakery and pastry and training
restaurants.
The front office laboratory helps to understand the role of a
front office department. Students are taught basic telephone
etiquette.
The house keeping lab is where the students are imparted
with practical training in the Model Guest Room.
The institute also has an audio-visual hall for
demonstrations, guest lectures, seminars and workshops.
The library facility has valuable books, recommended by
the experts in their relevant fields. The college procures
national and international journals for the students’
reference.
A modern cafeteria in the campus provides nutritious food
to the students at no extra cost. Special dishes are served to
students on special occasions. The cafeteria is also used as
the place where student food festivals are conducted.

IIHMCA has always been a front runner in maintaining a

semester in the month August/September every year and

Preparing Students During COVID-19
As responsible citizens, IIHMCA since its inception has had
its internal hygiene and sanitation processes. Being a core
culinary institute, both the factors form an integral part of
its operations. The curriculum itself supports it by having a
separate subject related to hygiene sanitation based on
Hazard Analysis Critical Control Point (HACCP).
Special online classes are being conducted soon after the
guidelines were laid down by Osmania University. Students
coming to the campus are encouraged to put on the
masks/hand gloves and use the hand sanitizer provided at
vantage points in the college. Social distancing is enforced
and constantly monitored.

The yearly co-curricular activities give students of IIHMCA
the advantage of fine tuning their skills which are nurtured
by experienced faculties. The students have won various
national level competitions over the years which are held
annually in different parts of the country like Bengaluru,
New Delhi, Mumbai, Surat, Aurangabad and other cities.

At IIHMCA there is a conscious effort coupled with a
proactive approach to impart education whilst the transfer
of knowledge is always beyond the curriculum along with
additional inputs to mould even a below-average student to

(BCIHMCT) was established in the year 1999 under the
aegis of Shri Banarsidas Chandiwala Sewa Smarak Trust
Society, a charitable society working in the field of health

Tackling COVID- 19
In current crisis, it is certain that health and safety would be
the topmost deliberation and priority post-COVID-19, for
hotels and for all hotel management institutes. To impart the
right kind of knowledge, BCIHMCT has developed new
SOPS and policies to conduct the practical sessions and
theory classes as well. It has taken pivotal steps to
emphasize the contact-less service into the college while
doing simulating practice, especially while serving food,
hygiene during food preparation in various kitchen areas.
To prepare the students, faculty has included awareness
modules on the possible transferable diseases, social
distancing, and its impact on guests. A certificate course on
Covid-19 would be advisable for all students.

The year 2020 saw the global emergence of
the Covid-19 pandemic and many
governments responded to this develop-
ment with massive country-wide lockdowns. The
Indian government followed suit, all the while
hoping that this would pass over like a bad storm.
The lockdowns put in place as a response to the
Covid-19 pandemic had unfathomable impact on
the economy. Many businesses were shut down,
industries disrupted, and lives destroyed. The
Indian hospitality industry was perhaps one of the
worst impacted industries.
Pre-Covid, the hospitality sector of India was on
a prominent trajectory and had been transforming
at a rapid rate. The sector was witnessing a
gradual transition from a physical asset-intensive
and product-focused business to a more experi-
ence-centric and customer-focused business
approach. But 2020 brought that bright growth
path of this industry to a screeching halt.

he coronavirus outbreak and the lockdowns put in

normal wherein safety was of utmost importance.
This meant social distancing, daily sanitization and curbs
in social gatherings became a way of life. Consequently,
hospitality sector had to face massive trials and
tribulations due to high fixed costs, capital intensive
operations, and unfavourable debt service terms.
According to the financial ratings agency ICRA, the
domestic hospitality industry is expected to witness a
decline of over 65% in the fiscal year 2020-21, in a
report. The report by ICRA stated that this 65% contrac-
tion of the industry is due to massive operating and net
losses, wiping out cumulative profits of the four past
years. However, some estimates expect a sharp demand
recovery to take place in the later part of the financial
year 2021-22, as the vaccine rollouts gain traction.
The India hospitality sector has been one of the worst-hit
sectors, severely affected by the Covid-19 pandemic, and
subsequent lockdowns, which restricted mobility and
hotel occupancies in all the major markets, the ICRA
report stated.
Making the best of a bad situation
With the lifting of lockdown and travel restrictions, the
hotel industry has felt the need to recognise changing
customer preferences and adapt accordingly. Hospitality
veterans and aspiring players are curating innovative
ways to win the customer confidence back. They have
started to emphasise hugely on maintaining hygiene,
safety, ease of customer experience in reservations,
payments, lodging, and food and beverage (F&B)
services.
The recent industry developments have primarily
diverted their energies to strict safety and hygiene
protocols like –
Ÿ Frequent cleaning of public spaces
Ÿ Video displays to allow the view of the cooking
process
Ÿ Enhanced room cleaning practices
Ÿ Regular sanitization of high-touch points like elevator
buttons, sitting areas, doorknobs, etc.
Ÿ Temperature check of visitors at the entry
Ÿ Sanitising the visitors
However, all these standard operating procedures come
at a high-operational cost and have never been factored
in during the strategizing and budgeting process by
hoteliers.
Moving forward, we can expect innovations to guide the
path to recovery in the coming years. With the aim of
gaining a competitive advantage, hotel businesses are
increasingly focusing on strategies to provide holistic
experiential services in their offerings. Services are being
tailored to cater to unique requirements, all in the effort
to maximise customer retention and repeat business.
Many restaurant and hotel chains have opened online
revenue models to thrive during this crisis. Hotels are
rethinking the concept of ‘hospitality’ by creating new
array of services offering comfort to patrons’ homes and
offices. Food-delivery, housekeeping, facility
management and warehouse are already gaining a lot of
traction. End-to-end facility management of boutique
and corporate offices are one of the most anticipated
innovations to come in hospitality.
Owing to these changes, the next couple of years are sure
to see a complete turnaround in the experiential offering
and services of the restaurant and hospitality sector.

Unflinching support to students
Chef Manbir Singh, Head of the Department,
Hospitality and Hotel Management, said that the

“During semester IV, students undergo a compulsory
internship of six months in five-star hotels like Taj Rambagh
Jaipur, Oberoi Hotels, Hilton and Marriott Hotel, Jaipur
and other places. They have to prepare a project report
about the practical experience gained during internship by
working on various projects carried out under the
supervision of professional hoteliers, so that they can
understand the existing working practices, conditions and
acquire an in-depth knowledge. The whole process is well-
coordinated with the client industry and is efficiently
regulated with mentorship and guidance from faculty at
JECRC University throughout the training,” Manbir added.
Industry experts are invited to acquaint students about the
latest industry trends and requirement of future hotel

Established in 1972, Institute of Hotel Management,
Catering Technology, and Applied Nutrition, (IHM)
Hyderabad, an autonomous institute under the Ministry of

Initially started as Food Craft Institute Society, IHM

Ministry of Tourism, Government of India.
The institute has empowered its students with several
activities including maintaining excellent networking, PR
parties, strong alumni network and improving
employability skills by psychometric test workshops. IHM
also invites guest speakers from the industry to educate
students about the know-how of the industry. Apart from
these, IHM also has an excellent placement record and is
associated with National Entrepreneurship Network (NEN).
The students are also involved in organizing and
participating in numerous competitions as well as
programmes run by government such as Swachh Bharat
Abhiyan/Paryatak Parv/ Ek Bharat Shreshtha Bharat, Ekta
Diwas, etc.
The hotel industry is a vital part of the hospitality industry
with huge growth potential in the future which has a huge
demand apart from its glamour. The opportunities include
working in hotels, restaurant chains, cruise lines, airlines,
events management companies, retail industries tourism
and shopping malls, offices, hospitals, etc. A hotel
management career has become worthwhile and exciting,
appealing more and more students to make a career in it.
Achievements to Cherish
IHM-Hyderabad ranked third in all India level surveys
conducted by Global Human Resource Development Centre
(GHRDC) Survey, ranked fifth by Outlook and India
Today Survey, sixth by The Week Magazine and has
received Special Award for Placement Performance, Best
Award for Administrative Performance and Special Award
for All-Round Performance by Ministry of Tourism,
Government of India. Department of Tourism, Government
of Andhra Pradesh also recognized IHM-Hyderabad for
Award for Excellence. Additionally, IHM is also ISO
certified and the students are bestowed from the interaction
with prominent alumni.
IHM has the support of the ministry of Human Resources
Department, Ministry of Tourism, India Tourism, and State
Tourism. The government provides regular grants to
upgrade and apply policies to the institute for the students
to experience the savvy of the worldly hospitality industry.
IHM Hyderabad is a member of the Federation of Hotels
and Restaurants Association of India (FHRAI), South India
Hotels and Restaurants Association (SIHRA), Hotels and
Restaurants Association of Telangana State (HRATS) and
Lausanne School of Hospitality through National Council
for Hotel Management and Catering Technology
(NCHMCT), which facilitates national and international
networking for further expansion of the services and
sharing of knowledge and technology. The Institute has also
a tie-up with Welcomgroup Graduate School of Hotel
Administration, Manipal.
The Institute has a tie-up with Rotary Club of Hyderabad
through which the Rotaract club of IHM Hyderabad
organises May social welfare events as part of the corporate
social responsibility .The Rotaract club of IHM Hyderabad
exhibited their passion to serve society by organising
Diwali celebrations at old age homes, orphanages. They
created awareness for hygiene and safety in rural villages
and schools. They created awareness by conducting various
competitions and awareness programmes on nutrition,
breast cancer, Aids, World Animal Day and many more.
Fighting the Pandemic
The college has started practicing Covid-19 safety
guidelines issued by NHCMCT, Food Safety and Standards
Authority of India ( Hazard Analysis and Critical
FSSAI),
Control Point (HACCP), Government of India. In addition,
IHM Hyderabad organised webinars, guest lectures, hotel
tours, Covid protocols in the institute and hotels to adapt
the necessary changes for safety of all the stake holders.
The student and faculty attended various webinars on
Covid-19 guidelines. The institute is making every effort to
use equipment and chemicals to sanitize areas and all the
touch points as per the guidelines. The guidelines to wear
mask, maintain social distancing, sanitise hands and areas
are strictly followed to ensure safety of all the students,
staff and visitors.
Training Students to Global Standards
The Staff of IHM are trained at international standards of
Hospitality education. They have exposure to hospitality
standards in countries like Singapore, Indonesia,
Switzerland, Spain, Malaysia and other countries.
The students and faculty undergo exposure to global
standards of hospitality by attending workshops and guest
lectures by hotel industry experts and industry exposure in
renowned global brands. The courses are designed with
contents matching global standards. The infrastructure and
equipment are updated to match global standards.
IHM Hyderabad has highly reputed alumni base spread all
over the world. They visit IHM Hyderabad and share their
expertise of global standards which keeps the students

And those in the education sector have been constantly improvising ways to include knowledge and training to meet the constant demands of the changing market scenario. The need for grooming students in the face of adversities became pronounced in the past one year and institutes have been doing remarkably well in this regard. The food and the tourism industry had been seeing an upward swing in the past couple of decades or so and with this rose the demand for educational institutions to groom the future hospitality professionals as per the requisites of the global trends.   • 5. The past one year has seen uncertainty in the economic performance of the hospitality business that was doing great until the pandemic. But this has also given rise to improvise ways and means to set the ball rolling post-lockdown. While those in the hospitality business have adapted to the new normal and have introduced certain procedures mandatory to maintain hygiene and distance, hospitality educational institutes swung into action and began incorporating ways and means to train their students in the face of any crisis. The hospitality business has been impacted severely by the global pandemic that shook the world a year ago. Across the world, the academic curriculum of the hospitality institutions are being re-constructed and polished to address the concerns of the future travel needs, safety protocols and environmental regulations. But the latter half of this year looks bright for the tourism industry with the vaccination being administered. Hotel industry has opened up, albeit with all the safety and cleanliness guidelines prescribed by the government. The same is true with the tourism industry. After tremendous losses in 2020, the industry is now gearing up to meet the demands of travel enthusiasts and food lovers. Hospitality courses are focusing on the need to change with the demands of the changing times and according to World Travel and Tourism Council, the job market is also expected to see a rise this year. The Indian government followed suit, all the while hoping that this would pass over like a bad storm. The lockdowns put in place as a response to the Covid-19 pandemic had unfathomable impact on the economy. Many businesses were shut down, industries disrupted, and lives destroyed. The Indian hospitality industry was perhaps one of the worst impacted industries. Pre-Covid, the hospitality sector of India was on a prominent trajectory and had been transforming at a rapid rate. The sector was witnessing a gradual transition from a physical asset-intensive and product-focused business to a more experi- ence-centric and customer-focused business approach. This meant social distancing, daily sanitization and curbs in social gatherings became a way of life. Consequently, hospitality sector had to face massive trials and tribulations due to high fixed costs, capital intensive operations, and unfavourable debt service terms. According to the financial ratings agency ICRA, the domestic hospitality industry is expected to witness a decline of over 65% in the fiscal year 2020-21, in a report. The report by ICRA stated that this 65% contrac- tion of the industry is due to massive operating and net losses, wiping out cumulative profits of the four past years. However, some estimates expect a sharp demand recovery to take place in the later part of the financial year 2021-22, as the vaccine rollouts gain traction. The India hospitality sector has been one of the worst-hit sectors, severely affected by the Covid-19 pandemic, and subsequent lockdowns, which restricted mobility and hotel occupancies in all the major markets, the ICRA report stated. Making the best of a bad situation With the lifting of lockdown and travel restrictions, the hotel industry has felt the need to recognise changing customer preferences and adapt accordingly. Hospitality veterans and aspiring players are curating innovative ways to win the customer confidence back. They have started to emphasise hugely on maintaining hygiene, safety, ease of customer experience in reservations, payments, lodging, and food and beverage (F&B) services.
