THE KNOWLEDGE REVIEW
20. ourism in India has a rich
Thistorical backdrop, dating
back to ancient times when
travelers and traders visited the country
for its diverse cultural heritage and
vibrant traditions. However, the
formalization of tourism studies gained
momentum in recent times with the
establishment of institutions such as
D Y Patil (Deemed to be University)
School of Hospitality & Tourism
Studies.
It is one of the leading pioneer Hotel
Management Schools in the country.
The school was established in the year
1992 under the Maharashtra State
Board of Technical Education
(MSBTE); in the year 2002, it came
under the ambit of D Y Patil Deemed
to be University. The school has grown
far and wide and garnered a reputation
not only in India but worldwide.
With three decades of experience in
imparting excellent hospitality
education, this school has proved its
mettle and has set a benchmark for
others to follow. The school practices a
host of unique activities that set it apart
from the others in the field. It offers a
perfect blend of scholastic knowledge
and industrial exposure to the students
and trains them with such impeccable
finesse that they are revered for their
skills across the industry.
Visually Appealing Pedagogy
The school offers undergraduate and
postgraduate certificates as well as
diplomas in various attributes of
Hospitality. The students are taught
using conventional and advanced
modes of teaching that are visually
appealing and arouse interest in the
minds of the learners. The faculties
teach from elaborately designed and
highly informative power points,
engage in interactive discussions in
class, conduct real-life case studies,
show videos, etc., which facilitate the
process of learning.
SHTS has a vision to be a leader in the
development of professionals in the
field of hospitality management. It
aims to train and educate, at all levels,
persons of outstanding abilities who
can become future leaders in the
hospitality industry. SHTS is striving
to work closely and proactively with
the industry to address the need for
highly skilled human resources.
Identification and development of
critical managerial qualities is the
primary focus of faculty members.
Innovative teaching methods are
adopted in order to clarify concepts
and hypotheses.
Conventional classroom lectures form
the bedrock on which case studies,
assignments, group projects, seminars,
debates, elocution, role-playing, and
psycho-analysis help in further
development of the student. Fieldwork
and guest lectures are applied to give
critical practical orientation. The idea
behind the whole academic exercise is
not to make students exam-oriented but
business-inclined.
Quest for Delivering the Best
In the current education world, SHTS
is considered one of the pioneer
Hospitality Schools in the entire
country. The success of SHTS is the

Adapting Student-friendly
Environment
The hospitality industry has been
severely impacted ever since the
pandemic hit the country in early 2020,
and the school was equally affected in
the same academic year as the ongoing
teaching methods were hampered. Being
a complete practical course, SHTS
adopted all student-friendly methods of
teaching the students; videos of lectures
and practicals were uploaded to the
student portal, and students got access to
watch them anytime.
The school has never rested on its
laurels and has always strived to aim for
the stars. In its quest to offer exclusive
education, the school entered into an
association with the Confederation of
Tourism and Hospitality (CTH),
London.

Historical
Unveiling the
Progression
Modern
Cookery
Leading to
25. From Ancient Flames to
Culinary Innovation
www.theknowledgereview.in | 23
n the grand tapestry of human
Icivilization, few threads are as
diverse and compelling as the
evolution of cookery. Our journey from
ancient flames to modern culinary
innovation is a testament to the
profound link between history and the
food on our plates.
The Ancient Hearth: A Culinary
Cradle
Long before Michelin stars and
celebrity chefs, our ancestors gathered
around primitive hearths, discovering
the transformative power of fire. The
crackling flames not only provided
warmth but also birthed the art of
cooking. Imagine a time when the
sizzle of meat on an open flame was
revolutionary, marking the transition
from raw sustenance to a more
nuanced, flavorful experience.
26. The evolution of cooking began with
experimentation—trial and error that
laid the foundation for culinary
traditions. From roasting game over an
open fire to simmering stews in
rudimentary vessels, these early
culinary endeavors were fueled by
instinct and necessity.
A Culinary Tapestry Unfurls: The
Middle Ages
As societies evolved, so did their
culinary pursuits. The Middle Ages
brought a fusion of flavors, blending
indigenous ingredients with spices
from far-off lands. This era saw the rise
of intricate banquets and feasts, where
the artistry of cooking became a status
symbol. The kitchen became a realm of
innovation, with chefs experimenting
with novel techniques and exotic
spices.
Culinary guilds emerged, shaping the
first semblance of culinary education.
Apprentices learned the art from
skilled masters, passing down age-old
techniques and trade secrets. This
marked the beginning of a structured
approach to cooking, where knowledge
was a currency and the kitchen a
classroom.
The Renaissance Palate: A Culinary
Rebirth
The Renaissance ushered in an era of
rediscovery and enlightenment, not just
in art and science but also in the
culinary realm. As explorers traversed
the globe, they brought back a
cornucopia of flavors, spices, and
culinary techniques. The fusion of Old
and New World ingredients ignited a
gastronomic revolution, forever
altering the course of cooking.
Cookbooks, previously reserved for the
elite, became more accessible. The
became a stage for culinary
experimentation and artistic expression.
Culinary Innovation Today: A Feast
for the Senses
In the 21st century, the culinary
landscape continues to evolve at an
unprecedented pace. Molecular
gastronomy, farm-to-table movements,
and sustainable practices have become
the pillars of modern cookery. Chefs are
not just culinary artisans; they are
innovators pushing the boundaries of
flavor, texture, and presentation.
Culinary education has diversified,
embracing a multitude of approaches.
From traditional apprenticeships to
formal degrees, aspiring chefs can
choose from a rich menu of options to
hone their skills. Online platforms and
cooking shows have democratized
culinary knowledge, allowing
enthusiasts to embark on their culinary
journeys from the comfort of their
homes.
The Culinary Odyssey Continues
As we reflect on the historical
progression leading to modern cooking,
it becomes evident that our culinary
journey is a testament to human
creativity, adaptability, and the enduring
link between the past and the present.
From the flickering flames of ancient
hearths to the avant-garde kitchens of
today, cookery has transcended its
utilitarian roots to become an art form,
a cultural touchstone, and a global
language that unites us all at the
communal table.
The link between history and the
culinary arts is a celebration of our
shared humanity, a flavorful odyssey
that continues to unfold with each dish
we savor and every innovation that
graces our plates.
written word became a culinary
teacher, spreading recipes and
techniques far and wide. The kitchen
was no longer an exclusive domain but
a place where knowledge flowed
freely.
Revolutionizing the Kitchen: The
Industrial Age
The Industrial Age brought with it
radical changes to the culinary
landscape. The advent of
industrialization transformed the way
we sourced, prepared, and consumed
food. Canning, refrigeration, and mass
production altered the very essence of
cooking, making ingredients more
readily available and extending the
reach of culinary innovation.
Simultaneously, culinary education
took a leap forward. Formal culinary
schools emerged, offering structured
courses to aspiring chefs. The kitchen
was no longer the sole domain of
apprenticeships; it became an arena for
academic learning, blending tradition
with contemporary techniques.
A Global Culinary Melting Pot: The
Modern Era
In the 20th century, the culinary world
underwent a seismic shift propelled by
globalization and technological
advancements. Air travel and the
internet transformed the world into a
culinary melting pot. Ingredients,
techniques, and flavors from diverse
cultures became accessible to chefs
worldwide.
Culinary education, too, experienced a

attention. Print and electronic
media elevated this distinctive art and
highlighted its importance. When a
student wishes to pursue a career in
hospitality education, the field of
culinary arts is the main draw that
makes it possible for them to envision
themselves as a chef in the future. The
transition from Cook to Chef has been
revealed throughout the last few
decades. The titles ‘chefs’ and ‘cooks’
have been differentiated in the culinary
sector due to several futuristic
modifications.
In a situation like this, when an
increasing number of students want to
enter this field, hospitality educators

Harmony in Hospitality
Harmony in the context of the hospitality
industry goes beyond just pleasing
aesthetics; it's about creating an
environment where every element
seamlessly comes together to provide a
holistic experience. From the moment a
guest enters a hotel lobby to the time they
check out, the seamless flow of services,
ambiance, and interactions contributes to
an overall sense of harmony.
This harmonious atmosphere is not solely
restricted to physical spaces but extends to
the interactions between staff and guests.
A warm welcome, attentive service, and
genuine care create an atmosphere that
n the vibrant tapestry of the
Ihospitality industry, the fusion of
harmony and key performance
(H/K) stands as the linchpin,
orchestrating memorable experiences
and ensuring the triumph of
establishments. From opulent resorts to
intimate bed-and-breakfasts, the
marriage of H/K principles permeates
every facet of this dynamic field.
This article delves into the intricate
dimensions of H/K, unraveling its
indispensable role in crafting seamless,
enchanting encounters for both guests
and hospitality professionals alike.
36. staff, or subpar room cleanliness—the
overall experience is compromised. On
the flip side, impeccable service in a
lackluster setting might leave guests
feeling underwhelmed.
Striking the perfect balance between
these two elements creates an
environment where guests feel not only
pampered but also attended to with
precision and care. This symbiosis
results in positive reviews, repeat
business, and a strong reputation
within the fiercely competitive
hospitality industry.
Training and Development:
Nurturing the H/K Dynamic
To achieve and maintain this delicate
equilibrium, investing in the training
and development of hospitality
professionals is crucial. Staff members
need to be equipped not only with
technical skills but also with the
interpersonal skills necessary to create
a harmonious guest experience.
Training programs should emphasize
the importance of anticipating and
exceeding guest expectations, fostering
a sense of genuine hospitality.
Furthermore, ongoing education and
development initiatives contribute to
the continuous improvement of key
performance indicators. As the industry
evolves, staying updated on the latest
trends, technologies, and customer
preferences becomes imperative. This
commitment to growth ensures that a
hospitality establishment remains not
only relevant but also ahead of the
curve.
Synergy in Staff Dynamics
Beyond the physical and operational
aspects, the successful integration of
H/K principles hinges on the
harmonious dynamics among the
hospitality staff. A cohesive team, well-
versed in effective communication and
mutual support, plays a pivotal role in
delivering a seamless guest experience.
When employees work in sync,
understanding their roles within the
larger context of the establishment's
goals, it fosters a positive work
environment that naturally extends to
interactions with guests.
This internal harmony becomes
palpable to visitors, contributing to an
overall atmosphere of warmth and
genuine hospitality. Investing in team-
building activities, open
communication channels, and
recognizing individual contributions
nurtures a staff culture that aligns with
the establishment's commitment to
both harmony and key performance,
solidifying its position as a beacon of
excellence in the hospitality industry.
Conclusion
As the hospitality industry continues to
evolve, the synergy between harmony
and key performance remains the
cornerstone of enduring success.
Establishments that skillfully weave a
harmonious ambiance with top-notch
performance standards are not merely
providers of services—they become
creators of lasting memories.
Nurturing this delicate balance through
continuous training, innovation, and an
unwavering commitment to guest
satisfaction ensures that hospitality
establishments not only thrive in the
present but also future-proof
themselves in the face of evolving
consumer expectations. In this ever-
changing landscape, H/K emerges not
just as a formula for success but as the
very essence that defines the soul of the
hospitality experience.
goes beyond mere transactions,
fostering a connection between guests
and the establishment.
Key Performance in Action
Key performance, on the other hand,
refers to the essential elements that
drive the success of a hospitality
business. This includes operational
efficiency, service quality, and financial
viability. Every staff member, from the
front desk to housekeeping, plays a
crucial role in maintaining and
enhancing key performance indicators
(KPIs) that contribute to the overall
success of the establishment.
Efficient operations, including
streamlined check-in processes, prompt
room service, and effective
communication between departments,
are vital components of key
performance. A well-managed and
motivated staff equipped with the
necessary skills and knowledge is an
asset that directly impacts the
satisfaction of guests and,
consequently, the success of the
business.
The Symbiosis of Harmony and Key
Performance
In the hospitality industry, the true
magic happens when harmony and key
performance work in tandem. An
aesthetically pleasing environment is
enhanced by efficient operations, and
vice versa. A harmonious atmosphere
can be disrupted if service delivery
falters, while stellar performance can
be undermined if the overall ambiance
is lacking.
Consider, for instance, a guest entering
a hotel with stunning architecture and
stylish interiors. The initial visual
appeal sets the tone for their stay.
However, if the service falls
short—slow check-ins, unresponsive

comprised of academicians from other colleges, hoteliers,
book writers, and other department academicians. Every
time, the syllabus is modified to be up-to-date and in line
with the industry.
The modifications and the changes that prevail in the
industry are included in the syllabus. Every subject is
streamlined to impart the essential skills required for the
students to achieve success in their lives. The new norms
followed in the hotels after the pandemic in kitchen,
restaurant, accommodation operation, and front office have
been imparted in the syllabus. Courses on entrepreneurship,
life skills, and human values all have been included in the
curriculum of the students.
SRM Institute of Hotel Management believes in the holistic
development of every individual student. That's why, more
than classroom teaching, the students are given a wide
range of exposure to participate in competitions that happen
across the globe as its student, Ms. S. Anushree, has
participated in the World Skills Competition that was held
in Montreal, Switzerland. Also, other students, Anto and
Saurabh, won silver medals at the Southeast Asian Culinary
Challenge in Sri Lanka. Students also receive ample
exposure to serve in Raj Bhavan, Secretariat, and

Strive for Responsible Tourism
In hospitality, sustainability and ethical practices are crucial
elements addressed in various ways within the curriculum.
Incorporating specific courses or modules focusing on
sustainable practices in hospitality, covering topics such as
eco-friendly operations, resource management, waste
reduction, and responsible tourism.
The Institute also invites experts from the industry to share
the policies and practices followed in their hotels toward
sustainability and ethical practices. Universal Human
Values have been made mandatory for all the students of the
first year with two credits. Faculty members attend faculty
development programs and master development programs
on Universal Human Values, which is, in turn, imparted to
the students.
More than 15 SRM students of 2023 passed out have been
placed in the hotels of the USA under the recruitment being
done by Big Cedar Lodge, USA, and Wisdom Career
Education Consultancy. Additionally, with the
Memorandum of Understanding signed between Qatar Star
Services, 355 students received the opportunity to receive
International Exposure Training at the Arab FIFA Cup 2021
and FIFA World Cup 2022. The Institute's faculty members
are sent to Faculty Development Programs outside the
country, like at SWISS Hotel Management Institute,
Switzerland.
Embracing Inclusivity
Creating a diverse and inclusive learning environment in
hotel management programs involves various intentional
measures and practices like recruiting a diverse faculty and
staff representing different backgrounds, cultures, and
experiences, which allows for diverse perspectives in
teaching methods, curriculum development, and student
support. SRM curriculum is designed to give importance to
practical, theory, case studies, projects, industrial visit
examples, and materials that represent a wide range of
demographics and backgrounds.
The Institute encourages and supports student-led diversity
clubs or organizations that celebrate different cultures,
backgrounds, and identities. Added to this, organizing
events, workshops, and activities promotes understanding
and inclusivity among students.
Hospitality service is more human-centric, and even with
the advanced technology, the service by humans, for
humans, is always encouraged. Yet, many changes have
been implemented to be on par with the trends. Teaching
aids have become technological, and assessing students has
become digitalized.
Along with the blooming of new technology, SRM IHM is
taking up all initiatives to elevate hospitality to higher
levels. Its faculty members are being sent for all training
across the globe. To mention a few, Ms. J. Lalitha Shri, the
Vice Principal of the college, is attending the FDP
organized by SWISS Hotel Management College, Geneva,
on AI in the Hospitality Industry. Moreover, Mr.
Nithyanandan, the assistant professor, will be attending the
FDP in Switzerland, which will be held shortly.
SRM's students get their results within ten days of finishing
their exams. Moreover, interactive methods like
gamification, online quizzes, and collaborative projects that
leverage technology to engage students and reinforce
learning are incorporated at SRM. By integrating these
approaches, students can understand how technology is
transforming the hospitality industry and develop the skills
needed to adapt and thrive in a tech-driven environment.
