Title: Effects of various drying methods on the carotenoid retention of Dioscorea dumentorum(bitter yam)
tubers.
Objective: The objective of the project involves using various common drying methods ( oven, cabinet, vacuum and
sun) on the yam tubers and checking which of the drying has the ability to retain the nutrient and colour after drying.
