This interim report provides an overview of hygiene and quality management issues for animal source foods in Afghanistan. It discusses how the agricultural sector was impacted by decades of war and how demand for meat and dairy is now increasing. However, local animal products have worse hygiene and safety conditions compared to imported alternatives. Key current problems include a lack of knowledge about hygiene among producers, cross-contamination in retail, no processing facilities, high zoonotic disease risks, and a lack of production and market policies regarding hygiene and quality management. The applicant's interests related to this training program include food safety, quality assurance, hygiene of animal products, and food analysis.

Afghanistan was an agricultural country where
eighty percent of the population was busy and
dealing with agriculture and livestock’s related
work
During the conflict period as other foundation
were effected the animal sector is effected more
then others due to migration of rural area
people and nomads outside the
country.(1978)
After the tree decades of war where peace is
coming to the country and immigrants are
returning to the country once again wishes are
arising in the field of agriculture and livestock.

been increasing in Afghanistan
It is imperative that the meat, milk and other product
should be safe hygiene and wholesome.
Production of healthy animal processing meat value
additional proper packaging and marketing of meat
food and other animal source foods need the attention

The inducers are still using the experience of
thirty year back where the demand is big but in
city area more concerning on quality safety
hygiene and health.
In the present situation from all aspects the
local animal sources products are located in a
worse condition and consumers who they have
awareness about the hygiene and safety issues
