This document provides recipes for two typical Colombian foods: arepas and ajiaco. The arepas recipe calls for mixing cornmeal, butter, hot water, salt, milk, and cheese into a soft dough to mold and fry into arepas. The ajiaco recipe is a soup made with chicken, three varieties of potatoes, corn, arracacha tuber, huascas, capers, and milk cream. The ingredients are prepared and cooked together to make the hearty soup.

2. RECIPE FOR AREPAS
INGREDIENTS

Cormeal

Butter

Hot water

PREPARATION:

Mix all ingredients until a soft dough forms and it´s easy
to handle for shaping arepas. Then mold them and then
place in a pan with a little oil and fry. Serve them with
butter on top.

3. RECIPE FOR AJIACO
INGREDIENTS:

Chicken

Three types of potato Sabanera, pastusa and criolla
●
Cob of Corn
●
Arracacha (Tuber)
●
Huascas (Ground)
●
Capers
●
Milk cream
●
Onion and salt

4. PREPARATION:

Prepare water to make soup. Cook chicken with
onion salt to taste. Bring to a boil, then peel all the
potatoes and cut into circles. After about 15
minutes throw into the pot along with pieces of
cob. Then add sliced arracacha. Boil . It is cooked
for a few minutes to thicken. Remove from fire,
then wash huascas, add to soup and cover. Serve
with white rice and a slice of avocado. The soup is
served according to taste. Add cream milk and
capers accordingly.
