1. Which guest speaker hosted in class this semester had the greatest impact on you? What did you
learn from him/her and how might it affect your future? The topic that had the greatest impact on me
is about food security by professor Michelson. In the lecture, we discussed the importance of food
security, the trends of rising global food demand, factors that drives the expected demand increase,
and also the relationship between income and food. The first question she came up with is why food
security became such a major challenge worldwide? In my point of view, one of the simple reason is
that everybody needs food. By answering this question, she introduced the definition of food security,
and three hierarchical pillars. I learned that population growth, climate change, and water scarcity are
some of the factor that cause food security became a problem. Also, as people become more affluent
they start to change their tastes. For example, meat consumption in both developed and developing
countries predict to increase while their income rise. Then we analyzed couple graph and table. In the
over nourishment map, we found out that Europe, North America and Oceania seems waste the most
food. In the map of meat demand driver, I learned that since two third of meat Chinese consume is
pork, China actually consumes more total meat calories than US. Last but not least, professor
Michelson introduced Engel s law and Bennett s law. Engel s law stated that as income increase, the
portion of income spent on food falls, but the amount of money that expend on food might increase.
Bennett s law stated that as income rises, the portion of starchy food in the diet falls. One of the
interesting things I found out in her presentation is that if an average individual has an intake calories
below 1690 1930 kcal per day, he or she is undernourished. I was shock by this information because I
used to take around 1400 kcal per day, and I am actually undernourished if by this definition. After

BENIHANA INC, an American restaurant company was founded in 1964 in New York City and has
116 Japanese cuisine restaurants. Benihana simulation is a computer simulation of an operation
management result based on concept of Benihana restaurant in Tokyo designed by Harvard school.
The outline of the simulation is based on two seating position i.e. bar and the dining area. The target of
this restaurant based simulation is to boost utilization, nightly profit and throughput time by using
batching strategy, size of bar and cycle time and different advertising scheme. Simulation consist of 6
challenges where only 1 to 3 factor can be changed in challenges 1 to 5 whereas challenge 6 is a
combination of strategies to gain the maximum output i.e. nightly profit by using all possible factors
from 5 previous challenges.
I started simulation by testing all the possible outcomes from challenge 1 to 5 and used the best
scenario from one simulation to the other step by step and drew the conclusion at the very end.
CHALLENGE 1:
The first challenge was to determine whether or not batching dining room customer was beneficial.
Batching means that the parties must reach a number of eight before they are seated. Two scenarios
from the simulation show that batching is a better strategy that helped to increase profit. Utilization of
the restaurant capacity is largest while batching. We could place 8 people at single table rather than
placing group of 5 at one and 3 at another. The number of customers that can be served at one time
highly influences the profit. According to the simulation it is more beneficial to use batching as
average profit is $83.64 compared to average profit of $282.29 when not batched. By using batching
benihana restaurants are able to eliminate bottleneck that occurs in the waiting area/bar. By doing so
they are able to see more customers in their restaurants which can be seen in the graphs to the right.

experiences the latter as she leaves the comfort of her first world culture to spend time with the Tiv
tribe in Western Africa. The Tiv is a group that lives quite differently from what Bowen is used to.
They live very communally and as team, everyone contributing to the collective betterment of the
group, base their entire economy on agriculture, and use witchcraft as a way of maintaining social
order. Bowen even remarks witchcraft surprised her when she writes, despite my training I had

Also, as people become more affluent they start to change their tastes. For example, meat consumption in both developed and developing countries predict to increase while their income rise.
