We’ve all heard it before – eat plenty of whole grains to stay healthy. “They” say the consumption of
whole grains is needed to keep your heart healthy and to prevent colon cancer. That whole grains are
chalk full of B-vitamins and fiber. That whole grains are complex carbohydrates (rather than refined or
simple) which are digested slowly so as not to cause a spike in blood sugar.
And if that wasn’t enough, whole grains are the foundation to the USDA’s food pyramid. Not to mention
the fact that wheat is referred to as the “staff of life” because for thousands of years the consumption of
wheat has been found in virtually every society on the planet.
The Conundrum
Despite what you’ve heard or
what the USDA’s food pyramid
indicates… scientific findings are
finding the “staff of life” (wheat
and other grains) are now
becoming too be known as the
staff of illness and the staff of pre-
mature death… not life.
This shift is occurring due to a
number of compounds – proteins
- found in grains and their adverse
or toxic effects they have on the
human body. Therefore, one
might expect these compounds to
be referred to as toxins. But this

Phytic Acid (Phytate)
Phytic acid is the storage form of phosphorus found in many plants, especially in the bran or hull of
grains, beans, nuts and seeds. Humans are unable to digest phytic acid so the phosphorus is essentially
trapped in the compound making it unavailable to the body. The antinutrient effects of phytic acid takes
place once it arrives in the intestines where phytic acid can:
Inhibit mineral absorption (chelating agent) of iron, zinc, calcium & magnesium thereby causing
mineral deficiencies. Phytic acid also chelates the vitamin – niacin (B3).
Interfere with enzymes needed to digest food. Enzymes such as pepsin needed to digest proteins
and amylase needed to digest carbohydrates. Phytic acid also inhibits the enzyme trypsin, which is
needed for protein digestion in the small intestines.
Phytase is the enzyme that neutralizes phytic acid and liberates phosphorus. Humans do not produce
enough phytase to safely consume large amounts of phytate foods. However, humans are able to
tolerate a small amount of phytic acid – in the range of 100 – 400 mg per day. Also, probiotic lactobacilli
and other h.
Processed foods have been altered from their natural state for safety reasons (e.g. pasteurization) and for convenience (e.g. fast foods and boxed meals). The methods used for processing foods include canning, freezing, refrigeration, dehydration, and aseptic processing.
Processed foods lead to many chronic diseases and health conditions that are currently plaguing the nation.
High carbohydrate intake - this is probably the largest single cause of modern diseases such as hypertension, obesity, syndrome X, heart disease and cancer .

What is junk food?
Fast food (English fast food, [f st fud] - fast food) - class fastɑ ˌ
food, usually offered by specialized institutions. The term
"fast food" refers to food that can be cooked quickly and
provide the client.
4. The history of fast food
It turned out that fast food dates back to ancient Rome. It
was called with the Latin word "thermo". The ancient
Romans called this type of service, as an inexpensive fast
food. In every Roman town mass diners markets existed,
where all sorts of foods were sold. Almost modern food
courts!
5. In Rome there even was some kind of burger - beef cake, nuts
mixed with nucleoli, which they ate with bread. Also very
popular was bread dough, tossed with olive oil, they were
conveniently used as edible plates. Many centuries later, the
cake, covered with baked cheese, sausages and vegetables
was called an Italian pizza.
6. A particularly interesting and illustrative Roman fast food available in
Pompeii. The guides there show ruins that were once fast foods and
out storefronts or anything like them on the street. In the stalls are
built premises large vats, where and preparing food. Instead of
windows in the "old fast food" was boarded sliding partitions, tightly
closed at night, but they were only used at night and during the day

connected with increased levels of cholesterol, implies the
occurrence of diseases of the cardiovascular system and
gastrointestinal tract.
9. Fast food contains a lot of fats and preservatives, but as for the
nutrients - vitamins and minerals - it is virtually none. For the
preparation of fast food margarine is most often used -
unnatural product, containing large quantities of synthetic
isomers of fatty acids-saturated with hydrogen. They are also
the cause of health problems, such as severe heart disease
(coronary artery disease), cancer, problems with the nervous
system, infertility, diabetes.

which prevents spoilage, and can hide the real taste of tainted
food. According to statistics, it is because of the high content of
non-natural fat and salt in fast food. And as a result about 40
thousands of British people end their lives every year.

Among the most common problems of the gastrointestinal tract
caused by the regular intake of fast food, the doctors called
pancreatitis, gastritis, peptic ulcer and 12 duodenal ulcer.
