This document summarizes Brian Senior's research proposal on how nutritional knowledge and education affect American obesity. The proposal examines two concepts: 1) nutritional education, which could be improved through nutrition classes in schools and providing healthy cafeteria options, and 2) the rising rates of obesity in America as measured by BMI.
