2. Herbs as health food
Mr. Rahul dev (Asst. Prof.)
Most of the herbs which were in use since ages have proved to be useful in the
treatment and prevention of various diseases. A plant based diet contains many
non-nutritive phytoconstituents, along with macro- and micro- nutrients such as
proteins, fats, carbohydrates, vitamins or minerals necessary for normal
metabolism. These constituents together play an essential role in keeping human
body healthy and disease-resistant.
Some herbs are:
1. Alfaalfa,
2. Chicory
3. Ginger
4. Fenugreek
5. Garlic
6. Honey
7. Amla
8. Ginger
9. Ashwagandha
10. Spirulina
3. Alfalfa
Mr. Rahul dev (Asst. Prof.)
Synonym: Lucerne, Alfalfa weevil, Buffalo herb
Biological Source : It consists of entire herb of
Medicago sativa Linn, Family Leguminosae.
Geographical Source: Mediterranean and
Southwest Asia. It is mainly produced in USA &
Cultivated in Europe, Middle-East Africa, South
America & Australia.
Description: Alfalfa is perennial legume with
three to twelve years life. The plant has deep root,
erect or decumbent stems up to 1m in height,
glabrous or hairy in the upper parts. It has
trifoliate leaves with obovate leaflets, 10-45mm
long and 3-10mm broad. It bears 5-40 yellow,
blue or purple flowers. Fruits are curly pods with
2-8 seeds.

•Kidney, Bladder & Prostate Conditions: It is believed that alfalfa acts as a
diuretic and therefore is used for treating disorders of kidney bladder & prostate.
•Lowering Cholesterol: Alfalfa is highly fibrous plant and also contains
saponins. Alfalfa reduces serum(Blood) cholesterol levels due to the presence of
saponin which bind cholesterol with bile salts in the body.
•Neuroprotective Effects: In vitro studies performed in mice showed that
supplementation with alfalfa exert neuroprotective effects.
•Osteoarthritis & Rheumatoid Arthritis: It is believed that alfalfa cures
arthritis by reducing inflammation and helping the body to maintain a healthy
pH.
•Diabetes: Alfalfa grass is highly fibrous, therefore it is believed to control
blood sugar levels. Fiber is the indigestible part of carbohydrate, thus it is
slowly released in the blood circulation and slowly increases the blood sugar.

•Promotes Mensturation & Lactation: Alkaloids found in alfalfa seeds can
promote mensturation and lactation. Alfalfa is considered to be a galactagogue(a
food that increases milk supply), however, not much data is available to support
this claim.
Recommended dose: 5 to 10g of the dried herb can be taken 3 times daily.
Dose of 40g of heated seeds can be taken by mouth 3 times daily.
Side effects: Use of Alfalfa is safe in adults. But long term use can cause
autoimmune diseases called lupus erythematosus.
Special precaution: Avoid the use of Alfalfa in pregnancy and lactation
because of its oestrogen like action. It shold not be taken in persons having
autoimmune disorders like lupus erythematosus, multiple sclerosis as it can
worsen the symptoms. Use of Alfalfa should be avoided in hormone-sensitive
conditions such as breast cancer, uterine cancer, ovarian cancer &
endometriosis.

10. Ginger
Mr. Rahul dev (Asst. Prof.)
Synonym: Adrak, African ginger, Amomum zinger,
Ardraka, Black ginger.
Biological Source : It consists of fresh and dried
rhizomes of Zingiber officinale Roscoe, belonging to
Zingiberaceae.
Geographical Source: Cultivated in China, Nepal, US,
India, Bangladesh, Taiwan, Jamaica, Nigeria. India is the
largest producer of ginger.
Description: Ginger is herbaceous rhizomatous perennial
plant. It is about 1m tall having upright shoots sprout
from the rhizome at the base of the plant. Rhizomes are
aromatic, thick lobed, fleshy, pale yellow having ring like
scars. Plant has green, long leaves with sheathing bases,
tapering at the apex. The flowering spikes originate from
the rhizomes and when the plant matures they become
dry.
11. Mr. Rahul dev (Asst. Prof.)
Ginger contains of volatile and non volatile compounds.
The volatile oil of ginger is a mixture of over 24 constituents, mainly
monoterpenes.
Zingiberol is main aromatic principle of ginger.
The main pungent non-volatile principle of ginger is gingerols, a phenolic
compound. When subjected to heat or alkali treatment, gingerols are converted
into shogaols by dehydration and or to the compound zingerone after heat or
alkali treatment. The shogaols is more pungent then gingerols. The pungency of
dry ginger is mainly due to shogaols.
Fresh Ginger contains Volatile oil (1-4%), Starch (40-60%), Fat (10%), Fiber
(5%), inorganic material (6%), residual moisture (10%) and acrid resinous
matter (5-8%). Vitamin such as thiamine, riboflavin, niacin and vitamin C etc
are also present.

Description: It is bulbous perennial herb, similar to
onion. Plant consists of underground bulbs which are
rounded, composed of up to 15 smaller bulblets known as
cloves. Cloves and bulbs are covered by a whitish or
pinkish membranous coat. The stem is tall, erect and
flowering with pink or purple flowers. Leaves are sword
shaped, leaves attached to an underground stem. Hard
neck varieties produce a flower stem while soft neck
variety does not produce it. Garlic has strong pungent
smell due to organosulphur compounds.

Chemically alliicin is a diallyl thiosulfinate.
Alliicin has strong odour and is therapeutically active.
Allicin is also highly unstable, get oxidized easily and gets broken down to
sulfur compounds such as diallyl sulfide(DAS), diallyl disulfide(DADS), diallyl
trisulfide(DATS), ajoene and hydrogen sulphide.
