Edible vaccines are genetically engineered foods that contain antigens that can provide active immune responses against infections and inflammation. They are easy to store, transport, and can induce both mucosal and systemic immune responses unlike injection vaccines. Candidate plants for edible vaccines include bananas, potatoes, lettuce, tomatoes, rice, wheat and soybeans. While edible vaccines promise a cost-effective and easy way to administer vaccines, challenges include variable dosage amounts, inconsistency between plants, and difficulty selecting the best candidate plant.
