In the field of biotechnology there are many industrial applications that result in biotech products that we use everyday at home. Some of these are food science applications that utilize enzymes to produce or make improvements in the quality of different foods. In the dairy industry, some enzymes are required for the production of cheeses, yogurt and other dairy products, while others are used in a more specialized fashion to improve texture or flavour.
Isolation and Purification of Enzymes
Enzymes are unstable molecules with a definite physico chemical organization. Even a slight change in this organization reduces the activity of enzyme and sometimes the enzyme is totally inactivated.
Therefore, the enzymes have to be isolated under controlled conditions of pH, ionic strength and temperature. Since they are proteinaceous in nature, standard extraction and purification procedures for enzymes are the same as those used for proteins except that the activity of the enzyme is assayed at each of the following four steps of extraction and purification.
Purification of Enzymes - Enzyme purification involves three steps, electrophoresis. These three techniques described in the following text

The active site is a three-dimensional cleft formed by groups that come from different parts of the amino acid sequence
The active site takes up a relatively small part of the total volume of an enzyme
Active sites are clefts or crevices
Substrates are bound to enzymes by multiple weak attractions.
The specificity of binding depends on the precisely defined arrangement of atoms in an active site.
Microbial Kinetics in Batch Culture
Culture system containing a limited amount of nutrient, which is inoculated with the microorganism. Cells grow until some component is exhausted or until the environment changes so as to inhibit growth. Biomass concentration defined in terms of cell dry weight measurements (g/l) or total cell number (cells/ml).

Immunizing Image Classifiers Against Localized Adversary Attacksgerogepatton
This paper addresses the vulnerability of deep learning models, particularly convolutional neural networks
(CNN)s, to adversarial attacks and presents a proactive training technique designed to counter them. We
introduce a novel volumization algorithm, which transforms 2D images into 3D volumetric representations.
When combined with 3D convolution and deep curriculum learning optimization (CLO), itsignificantly improves
the immunity of models against localized universal attacks by up to 40%. We evaluate our proposed approach
using contemporary CNN architectures and the modified Canadian Institute for Advanced Research (CIFAR-10
and CIFAR-100) and ImageNet Large Scale Visual Recognition Challenge (ILSVRC12) datasets, showcasing
accuracy improvements over previous techniques. The results indicate that the combination of the volumetric
input and curriculum learning holds significant promise for mitigating adversarial attacks without necessitating
adversary training.

4. Type and Enzyme Function
● Cellulase
● Breaks down cellulose, a fibre found in the cell walls of all
plants and trees. Cellulose is the basic raw material used to
make products such as paper, cotton, and other textiles
● Hemicellulase
● Breaks down hemicellulose, another plant sugar that is not
as complex as cellulose and is easier to break down
● Xylanase
● Breaks down xylan, a gummy sugar present in the cell walls
of plants and trees. This enzyme type is used primarily in
the wood and pulp industry

● Breaks down starches and other
carbohydrates into basic sugars
● Protease
● Breaks down proteins
● Lipases
● Breaks down fats
6. INDUSTRIAL APPLICATIONS OF ENZYMES
● Enzymes allows detergents to effectively
clean clothes and remove stains. They can
remove certain stains, such as those made
by grass and sweat, more effectively than
enzyme-free detergents.
● Without enzymes, a lot of energy would be
required to create the high temperatures
and vigorous shaking needed to clean
clothes effectively.

7. ● Enzymes used in laundry detergents must
be inexpensive, stable, and safe to use.
Currently, only protease and amylase
enzymes are incorporated into detergents.
Lipase enzymes break down too easily in
washing machines to be very useful in
detergents.
● However, their stability is being studied and
further developed through methods such
as genetic screening and modification.
8. Enzymes for starch conversion
The enzymatic conversion of starch to
high fructose corn syrup is a well -
established process.
The first step in the process is the
conversion of starch to oligomaltodextrins
by the action of α-amylase.
Using traditional α-amylases, the pH has
to be adjusted and calcium must be added
to stabilize the enzyme.
9. Fuel alcohol production
In the alcohol industry, the use of
enzymes for the production of
fermentable sugars from starch is also well
established.
Intense efforts are currently being
undertaken to develop improved enzymes
that can enable the utilization of cheaper
and partially utilized substrates such as
lignocellulose, to make bio-ethanol more
competitive with fossil fuels.

One of the most energy and water
consuming steps in the processing of
cotton is the scouring step, the removal of
various remaining cell wall components on
the cellulose fibers performed at high
temperature and under strong alkaline
conditions.

developed based on a pectate lyase.
The use of these enzymes has benefited
