Distillation is the process of separating two miscible liquids by using differences in their boiling points. There are two main methods of distillation used to separate alcohol from water after fermentation - pot still distillation and patent/Coffey/continuous still distillation. Pot still distillation uses a copper pot and produces spirit in three parts (head, heart, tail) with the heart being collected for a second distillation. The patent/Coffey/continuous still, patented by Aneas Coffey in 1830, allows for continuous distillation in a single operation.
