Shellfish
SHELLFISH
• Shellfish can be divided into three groups:
– CRUSTACEANS:
• Covered by firm shells and have segmented bodies
• EX: Shrimp, lobster, crabs
– MOLLUSKS:
• Soft bodies that are partially covered by hard shells
• EX: Oysters, clams, scallops
– Cephalopods
• Though technically classed as mollusks
• Have a reduced internal shell called cuttlebone
• Ex: octopus, cuttlefish

– Have a hard outer skeleton or shell
– Jointed appendages
– Bone, outer jointed shell

• Crayfish
-Small fresh water fish.
- Average length 2 to 8 inches.
• Crabs
– King crabs
– Dungeness crabs
– Blue crabs
– Snow or spider crabs
– Stone crabs

• Lobsters
– Maine lobsters
– Spiny lobsters
– Slipper lobsters

 Mollusks are soft sea animals. There are two
types that are commonly eaten:
 Bivalves have a pair of hinged shells (like clams)
 Oysters are the most prized member of mollusks family
 Taste depend less on species, more on where they
grown
 Univalves have a single shell (like conch)
 Snails the best known of univalves
Mollusks
Cephalopods
- Squid, the most popular
- Cooked in High heat or long period of time under low heat
