What is Focus Group?
A focus group is a gathering of a small group of
guests with the same nationality to identify areas
of concern and look for feedback.
 Guests are chosen randomly
 The Front Office Manager run the process and
host the debate.
 Minutes are taken and action note distributed to
all department for corrective measures and
follow up.
 An Afternoon Tea is normally offered during the
session.
What is a Service Recovery Dinner?
A service recovery dinner is offered to guest
who had serious issues with the service
provided by the Hotel.
 Personalised Menu
 Private Venue.
 Top Service
 The General Manager or the Resident
Manager hosting the event.
An educational Tours is a group of professional
guests who works in a tour operator to sell and
promote our hotel.
They normally stay for one night to experience
your product.
The Sales Manager will host them till the
beginning until the departure from the hotel.
An hotel visit is a also performed during their
stay.
A Singles dinner is organised to regroup all in
house singles to ensure that are well looked
after as they are on their own.
This is done on a monthly period according to
hotel occupancy.
A member of Management normally host the
dinner.
Here also feedback is gathered to improve our
service.
It usually serves a purpose such as a charitable
gathering, a ceremony, or a celebration, and is
often preceded or followed by speeches in
honour of someone.
Some styles of Banqueting;
 End of year dinner for private companies.
 Group exclusivity
 Government Function.
Seating for Business Dining
 Seating arrangements are made by the host. It is
never correct for guests to shift name cards or take a
seat at a table other than one to which they have
been assigned. It is a host's prerogative to decide
how to seat its guests.
Who Sits Where at a Business Lunch or Dinner?
 When entertaining business associates in a hotel,
the head seats, at either end of the table, are
taken by the host and hostess.
 •At a round or square table, the head seat is
wherever the host wants to sit.
 •At a rectangular table, the head seats are at the
ends of the table.
 •The most important guests occupy the right-
hand seats, with the second most important
guests, if any, occupying the left-hand seats.
 At a business lunch or dinner where spouses
are not present, guests are more likely to be
seated in accordance with their importance.
 •The guest of honour is seated to the right of
the host, with a second guest of honour
seated to the left.
 •Less important guests are arranged, often
according to rank, around the table.

Who Sits Where at a Business Lunch or Dinner?  When entertaining business associates in a hotel, the head seats, at either end of the table, are taken by the host and hostess.  •At a round or square table, the head seat is wherever the host wants to sit.  •At a rectangular table, the head seats are at the ends of the table.  •The most important guests occupy the right- hand seats, with the second most important guests, if any, occupying the left-hand seats.

Before Service  To know preferences on drink and food.  To be aware of any allergens (Nuts, Milk, Egg, Gluten free etc.)  To get a list from chef for Veg and Non Veg.  Have a good product knowledge of what is being served.   • 28. During Service  To delegate a special waiter to serve PM and Host.  Pull out and Pull in of chair during speech.  Waiter must be ready with a glass of champagne in a tray when PM finish speech.

Dinner start.  First Course  Adjust covers, and drinks service  Second course  Adjust covers, and drinks service  Main Course  Clear side plates and cruets, and adjust cover for dessert.  Dessert Course.  Order of Tea, Infusion and Coffee.  Service of tea, coffee, or infusion with miniature or cookies.
