Salting
• - is the process that lowers the moisture or
water content of fish and other fishery products
to a point where microorganisms cannot live
and grow.
•Sodium chloride or salt, improves fish textures.

Smoking
•This method combines salting, pre-cooking and
drying. the final process of cooking is to
dehydrate the fish. The smoke gives color and
flavor to the fish
•The most popular fish preservation method is solar
drying. It is done in combination with salting.
Drying
•This method uses chemical preservations( including
Venigar and salt), smoke and other physical factors to
reduce the moisture or wat ever content of the fish.
Curing
•Dehydration is an artificial process of drying.

•This is a method of preserving food in brine
or venigar.
Pickling
•This method is also known as natural
dehydration.
Cooking
Canning
•Canning is packing of fish in an airtight
container such as tin cans and glass jar.
Fermentation
•It is a fish preservation method
in which fish in brine solution
undergo a chemical reaction.
Bagoong is the most popular
fermented product.
