Internet Course Development - Fall 2012 Cohort

NCCES virtual conferences
The North Carolina Cooperative Extension Service has held annual virtual conferences since 2009 due to budget cuts that eliminated in-person conferences. The conferences aim to enhance job performance for extension professionals. They utilize the Elluminate Live virtual learning platform and have averaged 165 participants per session. Topics covered include social media, Google Apps, and innovative technology uses. Food production System

Cooling
Cooling food too slowly can allow bacteria to multiply and cause food poisoning. Food should not be put directly into refrigeration after cooking, as it can raise the temperature inside. For safety, cooked food must cool from 60°C to 21°C within 2 hours, and then to 5°C within the next 4 hours, before refrigerating. Large portions should also be divided and cooled in smaller batches.
Thawing
Thaw frozen foods safely in the refrigerator or cool room which takes 1-2 days to completely thaw. When thawing below ready-to-eat foods, place juices from thawing food below to prevent cross contamination. Use microwaved food immediately after thawing and never re-freeze food that has been thawed.
Deep Frying
Deep frying involves total immersion of food in hot oil between 145°C and 195°C, which quickly cooks foods suited for this method. The oil is ready when a light haze rises from the surface, and it is important to allow the oil to cool to the correct temperature if too hot, as well as maintain sufficient but not overflowing oil levels in the pan.
Blanching
Blanching is a cooking method where food is briefly immersed in boiling water to stop degradation of structure or flavor, allowing vegetables to retain their bright color while also loosening skins for easy peeling. Blanching can occur in oil as well, such as for chips and battered fish before final cooking.

to significant land degradation, adversely affecting the region's land cover.
Therefore, human intervention has significantly influenced land use patterns over many
centuries, evolving its structure over time and space. In the present era, these changes have
accelerated due to factors such as agriculture and urbanization. Information regarding land use and
cover is essential for various planning and management tasks related to the Earth's surface,
providing crucial environmental data for scientific, resource management, policy purposes, and
diverse human activities.
Accurate understanding of land use and cover is imperative for the development planning
of any area. Consequently, a wide range of professionals, including earth system scientists, land
and water managers, and urban planners, are interested in obtaining data on land use and cover
changes, conversion trends, and other related patterns. The spatial dimensions of land use and
cover support policymakers and scientists in making well-informed decisions, as alterations in
