Vada Pav:
An authentic recipe from Maharashtra style cooking.
(tsp - teaspoon ; tbsp - tablespoon)
Preparation Time: 10 mins
Cooking Time: 20 mins
Serves: 4
Ingredients:
Bread / Ladi Pavs (8) - Small squares of white bread
For the Vada filling:
Potatoes (1 ½ cups) - Boiled and mashed
Green Chillies (2) - Chopped
Garlic / Lasan (6 to 8) - Grated
Mustard Seeds / Rai (1 tsp)
Asafoetida / Hing (1/4 tsp)
Curry Leaves (6 to 8)
Coriander Leaves (1/2 cup)
Tumeric Powder / Haldi (1/4 tsp)
Oil (1 tbsp)
Salt (2 tsp)
For the outer covering:
Gram flour / Besan (3/4 cup)
Tumeric Powder / Haldi (1/4 tsp)
Baking soda (a pinch)
Oil (1 tsp)
Salt (1 tsp)
Water (1/3 cup)
Other ingredients:
Oil - For deep-frying
Preparation:
For the vada filling:
1. Pound the Green chillies (2) and Garlic / Lasan (6 to 8) using a mortar and pestle.
2. Heat the Oil (1 tbsp) and add the Mustard seeds / Rai (1 tsp). When they crackle, add the Asafoetida / Hing (1/4 tsp) and Curry leaves (6 to 8) and sauté for a few seconds.
3. Add the pounded mixture and sauté again for a few seconds.
4. Add Coriander Leaves (1/4 Cup)
5. Add the Potatoes (1 1/2 cups), Turmeric powder (1/4 tsp) and Salt (2 tsp) and mix well.
6. Remove from the fire and cool. Divide into 8 equal portions. Shape into rounds.
For the outer covering:
1. Combine the ingredients Gram flour / Besan (3/4 cup), Tumeric Powder / Haldi (1/4 tsp), Baking soda (a pinch), Oil (1 tsp), Salt (1 tsp) in a bowl and make batter using approximately 1/3 cup of Water.
2. Dip each round of the vada filling into the batter and allow it to coat the mixture well.
3. Deep fry in hot Oil (approx. for deep frying), till golden brown. Drain on absorbent paper and keep aside.
How to proceed:
Slice each pav into half and spread some Dry garlic chutney inside.
Place one vada in each pav and serve immediately with Mirchi Thecha

Add all the other ingredients, except the salt, and sauté until the volume reduces to half, 3–5 minutes. Season with salt to taste and remove from the heat. 1. Andalucian Gazpacho
Ingredients:
• 1 kg of mature tomato
• 1/4 fresh onion (OPTIONAL)
• 1/2 green pepper (to fry)
• A piece of red pepper
• 1/2 cucumber if it is a big one, a whole one if it is a small
cucumber.
• 1 clove of garlic
• Salt according to your taste
• 2 tablespoon of Jerez vinegar
• 4 tablespoon of extra virgin olive oil
• 100 ml of water
Directions:
1. Clean the tomatoes, the red pepper and the tomatoes, the
green and the red pepper, the peeled cucumber and join them to
the rest of the vegetables.
2. Use the mixer to obtain a light cream.
3. Add the salt and the vinegar, and beat it.
4. Season with olive oil and continue to beat it. Taste it and
rectify the seasonning to your taste, if it is too much seasonned you
can add water.
5. Put it in the fridge and let it chill.
6. To decorate use some leaves of thyme or another herb
according to your tastes.
