Shrimp ceviche is a typical Ecuadorian dish made by marinating shrimp in lime juice along with onion, salt, and pepper. It is prepared in three steps - marinating onions in lime juice and salt, cooking shrimp until pink then cooling, and combining the shrimp and onions with tomatoes, orange juice, ketchup, cilantro, olive oil, and mustard. The ceviche can be served with a smoothie or beer.
