Homemade katchup INGREDIENTS • Olive oil • 1 large onion • 2 garlic cloves • 2 cans of peeled tomato • salt • black pepper
- 2. • 1/3 cup brown sugar • 1/3 cup white wine vinegar • ⅓ cup of water INSTRUCTIONS 1. Sauté the onion in the olive oil. 2. Add the garlic and sauté a little more. 3. Add the peeled tomatoes and season with the salt and pepper. 4. Put the brown sugar in the sauce and stir. 5. Add vinegar and water. 6. Cook for about 40min on medium heat, stirring occasionally, until reduce and stay consistent. 7. Remove from the heat and beat by blending in the blender or using the mixer until smooth. Nuggets of Vegetables (PORTIONS: 15) INGREDIENTS • 1 cup boiled peas • 3 small carrots, cooked and diced • 2 small potatoes, cooked and diced • 1 chopped red pepper • salt • 2 eggs • Flour or panko INSTRUCTIONS
- 3. 1. In a processor, add the peas and carrots. Process until you get smaller pieces, taking care not to turn a folder. Reserve. 2. Knead the potatoes, add the peas and carrots, the peppers and season with salt. 3. Knead dough with your hands, shape balls and flatten with your hands. 4. Raisin the beaten eggs and the flour. 5. Bake at 180 degrees, for 30 minutes or until golden brown. 6. Cut, with the help of a star cutter, right in the center taking care to cut to the end. Fill with ketchup and serve.
