How Freeze Drying Work
freeze-drying is the removal of water from a frozen product using a process called sublimation.
Prefreezing:
Food items that are freeze-dried must first be prefrozen below its
eutectic temperature. Although a product may appear to be frozen
because of all the ice that is present, in actuality it is not completely
frozen until all of the solute is frozen as well.
Primary Drying:
After prefreezing, ice must be removed from the product through
sublimation. This requires careful control of two parameters;
temperature and pressure. The rate of sublimation depends on the
difference in vapor pressure of the product compared to the vapor
pressure of the ice collector
Secondary Drying:
After primary drying, all ice has sublimated but some liquid is still
present in the product. Continued drying is necessary to remove
the remaining water. The process for removing this excess water is
called isothermal desorption. The excess water is desorbed from
the product by making the product temperature higher than the
ambient temperature.
Why Freeze Dry
Food spoils when microorganisms, such as bacteria, feed on the
matter and decompose it. Microorganisms need water to
survive, so if you remove water from food, it won't spoil.
Enzymes also need water to react with food, so dehydrating
food will also stop ripening.
Removing water keeps food
from spoiling for a long
period of time
Many fruits are more than 80 to 90 percent water. Removing
this water makes the food a lot lighter, making it it's easier to
transport. The military and camping supply companies freeze-
dry foods to make them easier for one person to carry. NASA
has also freeze-dried foods for the cramped quarters onboard
spacecraft.

can be clean ingredients, free from synthetic, artificial, and
highly processed materials.
Freeze-dried ingredients can be cut or ground into many
