Umami is the fifth basic taste sensation that contributes to the enjoyment of food, along with sweet, sour, salty, and bitter. Food with umami tastes rich, deep, satisfying, and long-lasting compared to food without umami, which can taste shallow and insipid. Some familiar ingredients that taste umami include Parmesan cheese, ripe tomatoes, braised beef, and mushrooms.
