here was a time when hotels used to give taglines like “Home
TAway from Home” and “Just like your Home”, but it’s time to go
beyond that concept. Gone are the days when people used to
think that “Hotels” and “Motels” are the places where one visits only
when they travel and need a place to stay. Hotels are no longer “Just a
shelter”, it is now a way beyond that.
You must be wondering why that is. Clearly because the modern-day
hoteliers are teaming up with the world-class architectures and designers
to build hotels with concepts that people could never imagine earlier. This
is not just a trendy topic that is circulating/revolving among the people all
over the world, people are actually spending a plenty amount of money to
experience something exotic.
Nowadays, hotels are offering such wonderful stays that people not only
reserve a hotel room just for the sake of shelter while travelling, rather,
people now book a hotel room just to experience something exotic and
extraordinary. In the days of our childhood, we used to hear stories about
igloos and hanging beds from the hills and tree houses. Imagine if we can
get a chance to stay in one such igloo, wouldn't that be wonderful?
IceHotel of Jukkasjärvi, Sweden, offers that experience.
When the whole world is shouting about eco-friendly innovations,
Keemala, Phuket, is a hotel made up of wood, straw, rock, and clay.
Wondering about staying in a UNESCO recognized World Heritage Site,
then Matetsi Victoria Falls in Zimbabwe, is the destination that you are

ome is the sweetest place to live in. Home which is our “sweet home” cannot be carried along
Hwith us. Yet, we need a place to stay which we can call “Home – Away from Home”. Our urge
for travelling, exploring and seeing the world is expanding daily and to fulfill those demands,
the hospitality industry is blooming at its best. And, the best part of hotel is that though it gives us the
comfort of home, it is something beyond homes.
A renowned Belgian Designer Diane von Furstenberg once said, “When you get into a hotel room, you
lock the door, and you know there is secrecy, there is a luxury, there is fantasy. There is comfort. There
is reassurance.”
The hoteliers are coming up with innovative hotel concepts with beachside standalone calm and cool
cottage near the beach, tree houses, hanging tents on the hills and igloos on the freeze-icy land among
many others. The hotel industry is rising, and there emerges the need for people who can manage them
and help people get an exotic stay with a memorable experience. To cater these ever-growing demands
of the industry, the hotel management institutes are coming up with modern and world-class courses to
prepare students to be hoteliers at par with international standards. And, to bring in the limelight the
most innovative institutes in this sector, we have come up with our exclusive edition on “The 10 Best

People often say that it is easy to be bad, it is difficult to be

Innovative Teaching Methodology which Keeps the

At HZU, innovative teaching methods are adopted to clarify
students' concepts and hypotheses. A blend of Conventional
and Modern class room with audio-visual equipment, class
room lectures form the bedrock on which case studies,
assignments, group projects, seminars, debates, elocution,

of the student. Well-equipped Conference Hall aids to the
same. Field Tours and guest lectures are part of learning
mechanism to give a critical practical orientation to the
pupils.
The idea behind the whole academic exercise is not to make
students exam oriented but business inclined. The ability to
explore new ideas and to take real life challenges can only
come through such an Endeavour, and that is what drives
the students of HZU towards a successful career graph.
Campus Facilities that Keep Students Energetic
With a high class infrastructure and fully equipped
accommodation including separate AC and Non AC hostels
for boys and girls, Himgiri Zee University strives to provide
all kinds of facilities ranging from transportation, cafeteria,
Wi-Fi campus, sports, open gymnasium, swimming pool,
medical aid, to enable comfort and a tech savvy learning to
the students with fully equipped computer labs. The Library
has state - of the - art information systems and provides
access to an extensive range of database, together with
traditional printed material. The library is stocked with
more than 30,000 books, 4000 titles and a number of
journals and reports that cover all subjects. Although the
primary mission of the library is to support the curricular
and research needs of the students, the library also provides
material and reference assistance for the faculty.

Dr. Rakesh Ranjan is actively involved
in research at international forum and served as International program committee and technical
committee member for various international Conferences and Journals.
He has guided seven Ph.D. students and has completed many sponsored projects. Dr. Rakesh
Ranjan has the distinction of being listed in Marquee's “Who’s Who in the World' for Science and
Technology and conferred “Sikhsha Rattan” at India Habitat Centre, New Delhi.
Since joining Himgiri Zee University, Dr. Ranjan has taken steps for strengthening the functioning of
the University. An all round development in all departments of the University is visible. HODs have
been given a broad framework and guidelines by Dr. Ranjan within which they have to work along
with their colleagues to take the University to greater heights.

Promotional Activities to Motivate Students enabling

HZU’s Frequent Industrial tours to renowned hotels of
India along with Industrial exposure training in different
star category hotels of repute helps students to be aware of
the hospitality industry with hands-on experience. Guest
lectures, sessions from the prominent personalities of the
industry widely covering various aspects of the operations
like Fruit & Vegetable carving, Sales & Marketing,
Property Management System, Professional
Communication, Cocktails and Mocktails sessions, Interior
decoration and theme décor etc., plays a vital role in
creating the interest of the students.
Regular presentations, case studies, and role play organized
by the University contribute towards the overall
development and prerequisite skills like leadership
qualities, organizational behavior and team building
abilities of the students along with regular sessions
highlighting the “role & importance of personal grooming
& hygiene in the industry”.
The “Student of the month” award is introduced by the
department to encourage healthy competition among the
students.
At HZU, students are encouraged to attend Catering at
reputed hotels and various such events so as to get real time
experience of the operations. The sum then collected, is
used for Students Welfare and thus making a small
contribution towards the society. At the University, students
also enjoy the facility of earning while they are learning.
Himgiri Zee University- At a Glance
Dr. Subhash Chandra, Chairman,Essel Group of
Industries and Zee Telefilms had brought together in 1995
a group of committed anthropologists, sociologists,
economists and development communications professionals
to set up TALEEM Research Foundation in Ahmedabad.
One of the mandates of Taleem Research Foundation was to
set up the Himgiri Zee University. Based on the motto
‘VasudhaivaKutumbakam’ (World as Family), Himgiri Zee
University has been established for the vocationalisation of
higher education which is national in character and
transnational in jurisdiction. The University is
characterized by its resolve not to discriminate on grounds
of caste, creed, residence, community, gender and religion.
HZU has been established under Act No. 17 of 2003 of the
State Legislative
Assembly, Government of Uttaranchal (Act 2003,
Uttaranchal AdhiniyamSankhya 17 of 2003) and has since
become operational.

The Vice Chancellor of the University Prof. (Dr.) Rakesh
Ranjan has always been a pioneer and reformer in terms of
modern professional education. With his support and
guidance, the Associate Dean and Head of the
department, Mr. Subodh Choudhary is successfully
leading the department, faculties and the students towards
the new pinnacle of success. The Food & Beverage
Production and Service laboratories are equipped with
modern equipment, technology, furniture, fixtures
everything that is required to have real time learning
experience for the students.
HZU –A Campus full of Exotic Events
A team of culinary students Ashish Kumar and Abhishek
Giri (BHM, 4th Semester) assisted by their juniors Avik
Robinson and Kartik Rana (BHM ,2nd Semester),
represented the university to compete in a Regional Master
Chef competition earning 3rd position during Tehri Lake
Festival 2018, organized by Department of Tourism under
the aegis of Uttarakhand government.
The Department of Hotel management & Tourism, under
the aegis of university, keenly organize various events like
Swatch Bharat Drive, World Tourism Day, International
Chef Day, Flower arrangements, Cocktail, Mocktail, Bar
tending, wine tasting and Theme based Chef Competition,
Food displays at various events like University fest-
eXpression and Fresher's party in the form of Live counters,
flambé, food and vegetable carving and bakery workshop
and a special workshop to avoid food wastage at home.
Apart from departmental activities, students actively
participate and won title in different co-curricular activities
like Extempore, GK quiz, mehfil-e-mushaira (poetry
competition) along with that, they participate with great
zeal and enthusiasm in rangoli, poster making, mask
painting, cricket, basketball, football etc.

few of its alumni have also taken up an Entrepreneurial role
to create their own milestones in the industry.
Innovative and Practical Educational Model
VMSIIHE follows an innovative educational model which
aims to prepare students for a dynamic career globally and
to achieve that target, the institute offers leadership
program, professional internships, guest lectures, food fest
events and inculcates in them a professional attitude with a
holistic approach which has fetched the Graduates
placements not just in India but also in the UAE and
European countries.
Going Beyond Classroom Education
Not just an educational model, VMSIIHE takes a step ahead
and provides students with all the facilities that one needs to
understand the practical aspects of the hospitality sector.
The well-designed campus of the institute spread over 6
acres has a fully functional training hotel on the lines of a
five starred hotel, complete with a grand lobby area and
reception, well-appointed guestrooms, restaurant, kitchen
area and banqueting facilities. Additionally, the institute has
spacious classrooms equipped with technologically
advanced facilities including central air conditioning, LCD
screens, projectors, laptops and Wi-Fi connectivity. The
classrooms are designed while keeping in mind numerous
factors such as natural sunlight, weather conditions and
comfort of students. Another interesting factor about
VMSIIHE is that the students here are guided by
International faculty who resides on the campus, and all
other faculty members of the institute are well qualified.
Events Guiding Students to be Extraordinary
VMSIIHE follows environment friendly practices while
keeping in mind climate change and other environment
issues. Some of the best practices implemented at the
Institute are the Waste Management System, Rain water
harvesting, recycling of used water to be used for gardening
and plantation activity all over the campus.
The Institute has taken up many initiatives including
organizing Blood donation camps, dental camps, visits to
old aged homes, orphanage, under privileged children etc.,
as a part of its Institutional Social Responsibility.
Prof. Irfan Mirza is the Director / Principal at the
V. M. Salgaocar Institute of International Hospitality
Education in Goa. With a rich experience of over 35
years in the hospitality industry, Prof. Mirza serves
and leads the institute towards the way of success.
Prior to joining VMSIIHE, Prof. Mirza held the position
of Director, Academic Relations (India) for César Ritz
Colleges, Switzerland and was a visiting faculty
member at various institutes. He has vast knowledge
in planning and setting up hotel management
institutes. He has been a project consultant and has
successfully set up hotel management institutes
abroad and in India including European International
College Abu Dhabi, Jindal School of Management in
Baroda, Oriental School of Hotel Management,

FoodIndian cuisine is considered as one of the most varied and expansive cuisines. Streets of India are often considered as
gastronomical delights. India and food are inseparable and Indians are famous/well-known for both fasting as well as
feasting. Famous food stories include how Maharajas and Nizams would carry their Chefs or Royal Khansamas along
with them wherever they went. Many recipes from different parts have been adapted and improvised to suit local palates. If a
visitor to India ever asks a local about the local food and delicacies, chances are he/she will end up as a guest or “Atithi” and
served every possible dish. There’s a dish for every season and every reason. Feeling festive? Enjoy special sweets like
Chenna Poda and rich, aromatic dishes like Dhansak. Feeling sick? Bounce back with a dose of humble khichdi or
haldi-doodh.
The world is already familiar and in love with dishes like Butter Chicken and Chicken Tikka Masala with the later even being

Black Rice – Black or Purple rice is native to Manipur and is said to hold medicinal and
health benefits. It is generally cooked along with dried vegetables and chunks of meat.
Makhan Malai – Known as Makhan Malai in Lucknow or Daulat ki Chaat in Delhi,
this dish is a labor of love. Milk is churned for one complete full moon night, especially
during winters, to make this frothy, creamy, melt-in-your-mouth dessert. It is sold only
in the early winter mornings, as it melts as the day gets warm.
Ande ka Halwa – On that sweet note, Egg halwa or Ande ka Halwa is another sweet
that is unusual and exotic. Preparation requires a lot of patience and a handy recipe to
the original dish that has traveled over generations.
Junnu/Kharwas – Made from the first milk of lactating cattle (cow/buffalo/goat) this
creamy, cheesy and extremely nutritious dish is popularly known as Junnu in Andhra
Pradesh or Kharwas in Maharashtra.
Benami Kheer – “Kheer” reminds one of the favorable mix of rice and milk with sugar
and loads of dry fruits. While the dish has many variants, Benami Kheer is perhaps the
most unusual. The main ingredient of this dish is, “Garlic”. Strange, but it is definitely
worth a try.
Karandi Omelet – A twist to the regular fluffy and filling omelet, this one is ball-
shaped. Traditionally cooked in a ladle or karandi which provides it the ball-shape, it
also contains tiny bits of meat.
Kane Bezule – Fresh Kane or Lady Fish is caught off the Mangalorean coast. It is then
crumb fried and served. It blows away the patrons with its crunchy yet tender taste.

Mutton Rogan Josh – A mouth-watering mutton dish from Kashmir, the Master Chefs
believe that it is the water of the Jhelum that gives this dish a unique taste.
Baby Shark Curry – Also known as Mori Xacuti, this Goan dish has baby sharks, cut
into small pieces and de-skinned. They are then cooked in gravy made from coconut
and Goan spices.
Chaprah – A zesty, tangy hot chutney or condiment with an ingredient that’s unusual.
Chaprah is made of Red Ant and its eggs. Native to the forests of Chhattisgarh, the ants
are sun-dried, sprinkled with special spices and ground to form this special chutney.
Frog Legs – Indian bullfrog legs are battered and deep fried. Natives of Sikkim love
this dish and swear by its medicinal properties too. Goa also serves up this dish during
monsoons which are aptly nick-named “Jumping Chicken”.
Paya –This one is another ‘leggy’ dish from the Nizami kitchen. This is a curry made
of hoofs of animals like goat and is traditionally slow-cooked, usually overnight, to
bring out the true flavors.
Eri Polu – An exotic dish from Assam, this is made out of silkworms. The silkworms
are first boiled and then cooked with a mix of spices.
Doh Kleh – A pork and onion salad garnished with, hard to believe, pig’s steamed
brain. This extremely adventurous dish is easily found in the hills of Meghalaya.

higher revenue and nest service quality standards. He also served as a Role Model for the team members to

He was associated with ITC Hotel Park Sheraton  Towers, Chennai to enlighten his knowledge and skills of
the hotel operations during the graduation degree period. He was the Departmental Trainer in the hotel and

His latest book “Environmental Science and Engineering” was published by Narosa Publishing House in the year 2017. Dr. Rakesh Ranjan is actively involved in research at international forum and served as International program committee and technical committee member for various international Conferences and Journals. He had extended the Theory of Planned Behavior model, a popular model developed by Icek Ajzen to predict the behavioral intentions of the people.
