Kundan Lal was born in Peshawar, a Hindu of Punjabi and Pathan origin. As
a child he worked in a small catering shop, that eventually became a
restaurant called X. When India was partitioned, he and his family came to
Delhi, where he set up a small roadside café on Daryaganj, near the Red
Fort and named it X. He tried different spices until he settled on the blend
that is used in the restaurant even today. Pieces of chicken and even whole
chickens were marinated in this mixture and yoghurt and roasted in the
tandoor.
The restaurant became a favourite of many politicians, including Jawaharlal
Nehru and his daughter Indira Gandhi who took many visiting dignitaries
there. The restaurant catered to many important events including a state
dinner for the visiting American First Lady Jacqueline Kennedy and the
wedding reception of Nehru’s grandson Sanjay Gandhi. Today it has over
90 franchises all over the country.

It is one of the world’s most spectacular food related events, held annually
at a temple in Mount Govardhan near Vrindvan at the end of the rainy
season. It commemorates an event in Krishna’s childhood when he
persuaded the local cowherds to make their annual offerings of harvest
grains and pulses to Mount Govardhan instead of to the god Indra.
Angered, Indra punished the people by sending a violent rainstorm, to
which Lord Krishna lifted the Govardhan hill with his little finger thereby
providing shelter to the people from the torrential rain.
To commemorate this event, worshippers build a large mound of rice,
sometimes weighing thousands of kilos, in the temple courtyard, facing
the sanctum where the deity resides. They surround it with hundreds of
dishes of sweets, savouries, vegetables and grains. Pilgrims come to
Govardhan to view these displays and enjoy the food, which is later
distributed to the devotees.

The idlis are cooked and dried using infrared radiation at a temperature of
700º C, and then further dried by microwaving. The moisture is zapped out
of them, but not the taste, smell or nutrients. The idlis and sambhar are to
be eaten after adding hot water; the coconut chutney needs only cold
water. Each idli is 12 gm and swells to 25 gm when soaked in water. The
desiccation makes it impossible for micro organisms like bacteria to grow
and increases the idlis’ shelf life to more than a year. The sambhar and
chutney are also dried completely with infrared radiation, a technology
that has been used in the preparation of food over the past six years or so.
Yoghurt has also been developed using pulsed electric field technology in
which short bursts of electricity are passed through a fluid food. It renders
microbes inactive but the tricky part is to keep the good bacteria alive.

His father was a cobbler, and Adolf and his brother Rudolf learned the trade
as they grew up. They had a partnership in the early days, having a shoe shop
in their mother’s laundry. During the 1936 Olympics, the brothers
approached American Jesse Owens about wearing their shoes during the
competition. Owens obliged, and even went on to win four gold medals at
the event.
Dassler started his own brand, and went on to create history. The most
famous among his many innovations were specially designed cleats, with
exchangeable, screw-in studs, for the West German national team in the 1954
World Cup.
