9. Penicillin- it is highly desirable to use a high-yielding strain
in the manufacture of an antibiotic. This can be achieved
by sequential genetic selection.
Streptomycin- the culture used in streptomycin production
is streptomyces griseust. Glucose , fructose , galactose ,
xylose, mannitol , maltose , lactose or starch can be used
substrates in the fermentation medium.
10. Uses of antibiotics
1.In animal’s and plant’s bacterial disease
treatment.
2. In storage of perishable foods like meat,
fish & poultry .
3.To inhibit undesirable bacterial growth of
culture media.
4.In the form of contamination control
agent in special fermentation process.
5.Swine calves and other domestic
animals.

11. Fermentation of organic acid
Introduction – about sixty kinds of organic acids are
known as microbial products example- citric acid , amino
acid , glutamic acid.
Citric acid-citric acid used in many fields. Its industrial
uses may be listed as under :
1.As an acidulant in food and pharmaceutical industries.
2.Citrate & citrate as plasticizers.
3. It is used in soft drinks & carbonated beverages
4. It is used in production of detergents.
5. It is used in tanning & Textiles.
12. Amino acid production:-amino acids, like vitamins form an
important class of compounds . they required by living
cells as growth factors.
Glutamic acid production-a derivative of glutamic acid
mono-sodium glutamate is used to develop a flavor in
food products.
Glutamic acid is in high demand as condiment.
13. Significance – In the industrial processes like food
stuff, alcoholic beverages, medical fields & chemical
industries yeast are broadly used by various
fermentation processes.
Conclusion- By industrial process too many
microorganism are used by which fermentation of
many useful products are being done.
