Specialty restaurant is one of the Food and Beverage Outlets where the
entire atmosphere and decor is geared to a particular theme, mainly
related to a regional cuisine like Chinese, Indian, Nepalese, Japanese,
French.
Features :

• Special exotic dishes are served
• Highly Priced Menu
• Business hour is less
• High standard service is follow .
• Low turnover for covers
• High average check (A.P.C.) - Highly priced menu and less number of
guests so the average check OR the Average Per Cover is high
• Cover Charge- It is the charge put on a guest for being at the cover or
using the cover.
• Dispense Bar
• Uniform of the service staff, linen, and service ware are according to the
theme and from the country where the food originates.

These restaurants deal with more than one cuisine
like Indian, Chinese and Continental etc. They are
not as exclusive as the specialty restaurants. There
is no emphasis on adherence to the culture and

community. They generally have specific time of
operation . They are not as highly priced as a
specialty restaurant.

4. All Day Dinning restaurant:
• Single or multi-cuisine restaurant . Meals offered depend on
theme or operating hours. Usually modestly furnished and mid-
priced. Usually most of five star hotel it is open for breakfast ,
lunch , dinner with open buffet to cater more number of people.
5. Steak House 0r Grill restaurant :
They specialize in grills and barbequed items only and here
specially different types of
joints of meats , sea foods , poultry
, fish are served with wines and
other drinks . The kitchen is
separated from the service area by
a glass partition so that guest can see
the chef preparing the food. . The
guests are normally assured of better
hygienic condition as they can see the
actual food preparation.

spirits, juices, aerated waters, cigars
and cigarettes. They have certain
specific hours of operation and the
law strictly governs the operation.

room is known as room service . The
service in room service is always in trays
and trolleys.

• 2. A function Prospectus is drawn up by the
department and the entire function is organized as per
the hosts request .

A pub generally independently exists,
which serves only beer along with
authentic English foods are served like

It is a Food and Beverage Outlets which
is principally meant for
dancing to recorded music.

They are generally attached to
hotels and are open to members
only. The operation starts late in
the evening and goes on till late
in the night with live music . An
elaborate menu is offered and
the service is quite formal and
extensive.

• Pastry shop / Cake shop
They deal with only pastry or pastry related products. Those, which are
attached to hotels, deal with pastry prepared in the same hotel. Service is
done across the counter. Very limited seating arrangements may be
provided if space permits.
Coffee Bar
• This is a very recent development and becoming very popular. These
outlets deal with only coffee. They specialize in different types of coffee.
Both alcoholic and non-alcoholic coffees are served here. The alcoholic
coffees are commonly called as specialty coffee.
Vending machine:
Automatic dispensing machines- aerated beverage, coffee, tea etc. installed
in cafeteria, airlines, railways etc .
QSR: quick service restaurant
Theses are fast food outlets, which give importance not only to the pace but
also to the quality of service delivered. These are basically stand-alone
restaurants that have a brand name attached to them. The seating
arrangement and ambience is usually informal.
