Bath Restaurant and Bar
Nestled half way down Sukhumvit Soi 16 Bangkok like an oasis in the desert is Bath restaurant and bar.
Inspired by the ancient baths with their hedonistic pleasures and tasty delights of the Roman empire, this
lounge and bar will not only surprise you with its uniqueness and very much understated attention to
detail, but will make you feel very relaxed at the same time. I went to meet Richard and Pat, the owners:
We are determined to create the quintessential casualfine dining experience in Bangkok” Richard told
me, and you can see he is very relaxed and at home in his surroundings.
“All too often people have to get dressed up to experience nouvelle cuisine, and often cannot really relax
as it all about the airs and graces one is expected to keep up whilst dining in fine restaurants. We are
bringing Quality home cooked dishes in a very casualambience, we don’t care what you look like or how
you are dressed, just come for great food and quality mood music” Richard explained.

The decor of Bath is steeped in deep
traditions, every brick of the
building has been brought down
from Ayutthaya and was hand made
using the same principles that the
ancient Thai temples were made
from. The water features inside have
deep meditation and Feng Shui
significance.
“It was important to us to get the
mix between old and new,
embracing the best of each time” Pat
told me. “Not just in the décor but in
our food as well. We have Thai
chefs who have been through a very
intensive training camp to be
creative with molecular recipes with
exact temperatures embracing
technology, yet many of our dishes
are all about fresh food marinated
and slow cooked for hours using
sous Vide methodology to bring out
the true flavours and embracing the
old methods that have stood the test
of time. Again this is all part of the
‘overall experience’ we want our
patrons to enjoy at Bath.”
The owners are so relaxed they
didn’t even want to be labelled a
Thai or European restaurant, their
menu being very comprehensive
with many dishes from all
nationalities.

Richard has a deep love of music and you can’t help
feel relaxed at Bath. The playlist is very ambient and
deeply relaxing.
“We expect some dancing on weekend nights, no techno or rave, but just for lovers to get acquainted and
for people to just be themselves” Richard explained.

Pat and Richard have a string of very successfulrestaurants and bars behind them with over 15 years’
experience in the industry in many parts of the world. Their sophisticated relationship between bar and
food makes for a very unique and enjoyable experience. Their passion and love for people to have a good
time and chill out in their company, rather than feel pretentious and uneasy will make for Bath to become
a household name in the Bangkok restaurant scene sooner than even they expect.

Job Description:
Assisting the lead chefs in the making. Possess deep knowledge of food preparation activities, ingredients
and food combinations and use this knowledge to assist the chef in preparing exceptional meals. The main
duty of an assistant chef is to make sure that all ingredients are available for the chef so that he can cook
without any hindrances or delays. The culinary world depends highly on customer satisfaction so it is
important to do everything on time and assistant chefs make sure it does.
Typically, assistant chefs ensure clean cooking utensils, chopped ingredients and clean work areas so that
the chef can get right down to work. Another part of their work is to make sure that order plates are
aesthetically arranged and that the portions are accurate.
• Refer to list of needed ingredients on a day-to-day basis and check inventory
• Acquire ingredients not available in storage prior to the start of the day
• Inform kitchen staff of their schedules and delegate appropriate duties
• Prepare ingredients by chopping vegetables and meats
• Assist head chef in cooking dishes according to set recipes
• Monitor food budgets and make sure that all supplies are bought within the set budget
• Make arrangements to store food items in a safe and orderly manner
• Rotate frozen food items as standardized in the kitchen rule book
• Hand ingredients and utensils to head chef during food preparation activities
• Maintain kitchen order by ensuring cleanliness of tables, counters and work areas
• Oversee cleanliness and maintenance of kitchen equipment and utensils
• Operate kitchen equipment such as ovens and grills for cooking purposes

• Maintain knowledge of all recipes so that the head chef’s place can be filled in effectively in case of
absenteeism
• Set prepared dishes so that they look aesthetically pleasing
• Make-certain that appropriate portions have been dished out
