1. Grapes are a type of berry.
They are either red or white
in
skin colour.
When the 2 types of grape
are
squeezed the juice colour is
CLEAR in both.
2. Grapes need
sunlight, water and good
soil to grow.
The growing season is
approximately from
September to April.
Grapes growing further
south in Australia will
mature later than others.
3. "HARVESTING " means to
pick the grapes.
Harvesting occurs from Late
January to May depending on
geographic location, amount of
sun during the season and
amount of rainfall.
Grapes can be picked
MANUALLY or by
MECHANICAL HARVESTER
4. Late Harvest grapes are used to make
sweet and sticky dessert wines.
They have a fruity and very sweet taste and
are a lot more thicker in viscosity (how quick
they pour).
Dessert wines are usually a dark yellow to
orange colour and are served in 375ml
bottles as the standard serving measure is
usually 90ml.
5. Wine glasses should be
free of chips, cracks and
stains such as water marks.
Need to be spotless.
Always handle wine glasses
by their STEMS.
This is part of the service
ritual of serving wines.
6. “Selling wine by the glass”
One bottle of
750 ml wine
should yield
5 x 150ml
glasses.
7. NEVER wash a metal ice
bucket in a commercial
dishwasher as the hot water
will discolour the surface and
leave awful looking stains and
streak marks.
Hand wash in luke warm
water with a little soap suds
and rinse in cold water and
then hand dry.

9. BODY
This means the texture and
weight of a wine.
The chemical in wine that gives it
body is called “glycerine”.
Some wines pour thicker than
others. Other wines pour a lot
quicker and have a very “thin”
taste to them.
