Value added wheat products:
Value added is the process of taking raw commodity and changing
as form to produce a high quality end product.value added is defined
as the addition of time,place,and/or form utility to a commodity in
order to meet the tastes/preferences of consumers.
Increase in value caused by processing or manufacturing
&marketing or distribution , exclusive of cost of materials ,packaging,
or overhead.
Objective is to increase marketing value of raw & semi processed
products.
Example : milling wheat flour into bread flour to produce
flavoured or textured breads
Bread is one of the oldest basic food products of human being. Although it
is not known when human being made the first bread.
wheat bread is the most important food product today in sense of
production and nutrition.
 Bread’s unsurprising sales diagram can be resulted from the fact that it has
been consumed daily as a basic product in nearly every household for ages.
 However; influencing the world increasingly, some popular concepts like
“Natural nutrition”, “Healthy living” and “organic products” significantly
raised the consumers’ demand on whole wheat, light, 100% natural and
additive-free products.
 Particularly in recent years, the growth in sales of packaged, whole wheat,
whole meal, gluten-free and natural products is the most important sign of
this new and healthy living sense.

Bread is a source of complex carbohydrates.These
nutrients are absorbed slowly and provide energy for
hours.
It is rich in B group vitamins.
Bread consumption is important for people who have
lot of mental activity, people with stress and depression.
The wheat bread is helps to weight loss.
And it reduce the risk of metabolic syndrome, diabetes
and cardiovascular diseases.
Wheat: India is the second largest producer of wheat in the world.

World Bread and bakery products market:
Bread and bakery products remaining as basic food products for
human nutrition, continue the graphic of late years demonstrating
the consumption in global market.
Being accessible and nutritious of bread explains how it
managed to reach today through ancient civilizations without
losing its significance.
 The sales volume of bread in global market in 2016 is
approximately 125 millions of tons; in 2020 it rose to 130 millions
of tons.
WORLD BREAD CONSUMPTION AND DEMAND:
 World bread market’s total retail sales value of 220 billion Dollars in 2016
revealed nearly 50 billion Dollars increase and reached to the amount of 270
billion Dollars in 2020.
Also it is specified that 70% of global bread sales in 2016 was packaged
products and 30% was unpackaged.
In addition, while the growth rate of consumption of packaged breads between
2011 and 2016 was 5%, there was 2% decrease in the unpackaged breads sales.
Changes in the consumption of packaged and unpackaged breads are valuable
to be able to foresee the consumption trends in the future.
 Packaged bread sales outnumbered unpackaged bread sales in North America,
Australia, South America and Eastern Europe It is also known that packaged
bread consumption grows higher in the Middle East.
 it is known that increasingly urbanized population head towards the packaged
breads because of sensitivity about shelf life, easiness, hygiene and health.

Top 10 countries consuming the most bread in 2016
Indian scenario:
Bakery is one of the largest segments of the food processing
industry in india having annual turnover of approximately US$
900 million.
 The Indian bakery sector is one of the biggest sections in the
country’s processed food sector.
Bakery products, which include bread and biscuits, form the
major baked foods accounting for over 82 per cent of the total
bakery products produced in the country.
There are total about 2 million bakeries in india. The total
bakery production is estimated at 1.5 million metric tonnes in
bread.
The Bread market is estimated to be growing at around 7% per
annum in volume. The bread industry has a production of
approximately 27 lakh tonnes.

 Organised and unorganised bread players contribute around 40
per cent and 60 per cent of the total bread production, respectively.
 The organised sector comprises around 1,800 small-scale bread
manufactures around India, 25 medium-scale manufacturers and
two large-scale industries.
 The branded packaged segment in this sector was estimated to be
worth Rs 17,000 crore in 2012, and is expected to grow at 13-15 per
cent in the next three to four years.
 The bread and cake market is much more fragmented, with
multiple regional and local players.
India’s organised bakery sector produces about 1.3 millions
tonne of bakery products (out of three million tonnes) while the
balance is produced by unorganised, small-scale local
manufacturers.
The unorganised bread sector comprises an estimated
75,000 bread bakers, mostly located in the residential areas of
cities and towns.
 Thirty-five per cent of the total production comes from the
small scale sector, with about 1,500-1,800 units in operation.
As the bread industry is a low-margin business, cost control is
crucial in sustaining profitability in the long run.
Major players in this sector:
The major players in the bread segment are Britannia and
Modern Industries Ltd, who hold about 90 per cent of the
market share includes Britannia and Modern Industries Ltd.
 Apart from these two, there are a few large regional
players, such as Spencer’s in South India, Kitty and Bonn in
Punjab and Harvest Gold and Perfect in Delhi and the
National Capital Region (NCR).

The supply chain of bread market:
 Direct sales: This consists of direct distribution of products by
manufacturers to organized retail segments like supermarkets,
departmentalstores, etc. and sometimes directly to the end consumers.
 Indirect sales: This channel entails distribution of the product by
manufacturer through various middlemen like wholesalers, distributorsto
the front end sellers like retailers, hotels, restaurants, etc.
 As bread is a highly perishable item with a shelf life of only 2-3 days, it
needs to be distributed within 40 hours of manufacturing. The industry
needs to have a strong distribution network including various middlemen
and suppliers to reach every corner of the country.
Bread manufacturing is volume driven and low margin industry with an
disadvantage of very low shelf life of products which then requires very robust
supply chain management to deliver fresh bread to consumer daily.

In modern days bread is now becoming one of the most essential food items in
human diet due to its ready made availability and High nutritive value.
 It is the most consumable wheat based Bakery product. wheat flour, yeast,
sugar, salt, water and shortening agent are required as raw material to
manufacture bread the plant and machinery and the technology required to
manufacturing the bread, are completely available in India.
 since the consumption of bread is increasing rapidly day by day, the demand
also increasing enormously.
The market trend has changed from simple breads to designed breads and
flavoured breads.

Conclusion:
Wheat bread is the most important food product to day in sence
of production and nutrition. It is a staple food and good source of
carbohydrates and rich in B-complex vitamins. . In modern days
bread is now becoming one of the most essential food items in
human diet due to its readymade availability and High nutritive
value.
It is known as sick man diet. Bread is mostly perishable so the
supply chain should be fast enough to reach the consumer.

Value added wheat products: Value added is the process of taking raw commodity and changing as form to produce a high quality end product.value added is defined as the addition of time,place,and/or form utility to a commodity in order to meet the tastes/preferences of consumers. Increase in value caused by processing or manufacturing &marketing or distribution , exclusive of cost of materials ,packaging, or overhead. Objective is to increase marketing value of raw & semi processed products. Example : milling wheat flour into bread flour to produce flavoured or textured breads
  • 4. Bread is one of the oldest basic food products of human being. Although it is not known when human being made the first bread. wheat bread is the most important food product today in sense of production and nutrition.  Bread’s unsurprising sales diagram can be resulted from the fact that it has been consumed daily as a basic product in nearly every household for ages.  However; influencing the world increasingly, some popular concepts like “Natural nutrition”, “Healthy living” and “organic products” significantly raised the consumers’ demand on whole wheat, light, 100% natural and additive-free products.  Particularly in recent years, the growth in sales of packaged, whole wheat, whole meal, gluten-free and natural products is the most important sign of this new and healthy living sense. World Bread and bakery products market: Bread and bakery products remaining as basic food products for human nutrition, continue the graphic of late years demonstrating the consumption in global market. Being accessible and nutritious of bread explains how it managed to reach today through ancient civilizations without losing its significance.  The sales volume of bread in global market in 2016 is approximately 125 millions of tons; in 2020 it rose to 130 millions of tons.

Indian scenario: Bakery is one of the largest segments of the food processing industry in india having annual turnover of approximately US$ 900 million.  The Indian bakery sector is one of the biggest sections in the country’s processed food sector. Bakery products, which include bread and biscuits, form the major baked foods accounting for over 82 per cent of the total bakery products produced in the country. There are total about 2 million bakeries in india. The total bakery production is estimated at 1.5 million metric tonnes in bread. The Bread market is estimated to be growing at around 7% per annum in volume. The bread industry has a production of approximately 27 lakh tonnes.

  • 16. The unorganised bread sector comprises an estimated 75,000 bread bakers, mostly located in the residential areas of cities and towns.  Thirty-five per cent of the total production comes from the small scale sector, with about 1,500-1,800 units in operation. As the bread industry is a low-margin business, cost control is crucial in sustaining profitability in the long run.

The supply chain of bread market:  Direct sales: This consists of direct distribution of products by manufacturers to organized retail segments like supermarkets, departmentalstores, etc. and sometimes directly to the end consumers.  Indirect sales: This channel entails distribution of the product by manufacturer through various middlemen like wholesalers, distributorsto the front end sellers like retailers, hotels, restaurants, etc.  As bread is a highly perishable item with a shelf life of only 2-3 days, it needs to be distributed within 40 hours of manufacturing. The industry needs to have a strong distribution network including various middlemen and suppliers to reach every corner of the country. Bread manufacturing is volume driven and low margin industry with an disadvantage of very low shelf life of products which then requires very robust supply chain management to deliver fresh bread to consumer daily.
