Food processing in India provides important linkages between agriculture and industry by adding value to farm outputs and generating employment. However, the level of food processing in India is low, with only 2% of fruits and vegetables and 8% of marine products being processed. Most processing is also primary in nature with lower value addition compared to secondary processing. The draft National Food Processing Policy aims to address issues like post-harvest losses, increase farmers' incomes, and improve nutrition by promoting the food processing industry in India. However, the industry faces challenges like an unorganized sector, lack of infrastructure and cold chains, and low domestic demand for processed foods.
