The Condotta of Elba and Capraia Slow Food Convivium has been operating since 1988, starting with 30 members and now having 120 active members. They help introduce the Slow Food philosophy to local food producers, restaurants, wine and oil producers, fishermen, and honey producers. Some of their projects include saving 500 chestnut trees, participating in a food and wine tour of the island, publishing books on local producers, and opening a farmer's and fish market in 2010 that only sells locally produced goods. One of their most successful ventures was opening an Enoteca in the Fortezza Medicee in 2008 that serves local products and Slow Food Presidia items.
