More legends are connected to
the discovery of coffee. One of them
is the myth of Kaldi and his dancing
goats. The stimulating effect of coffee
has been discovered by Kaldi, the goat
herder in Abyssinia according to the
story. The herd was grazing and nib-
bling on a strange bush with red ber-
ries and leaves, and consequently they
stayed vivid throughout the evening,
whereas other times they had been
calm and peaceful. Next day Kaldi
tasted the strange red berries him-
self, and discovered the stimulant ef-
fect of coffee beans. For he was fear-
ful of the origin of this freshness he
experienced, and feared it was from
the Devil, he visited a holy person in
his home village and asked his opinion
on the berries.The holy person threw
the berries in the fire, from which en-
ticing aroma billowed to their utmost
surprise. C coffee beans are roasted
ever since.
An other myth says,the ill Mohamed
prophet was given the coffee as a gift
from archangel Gabriel. Drinking cof-
fee, he became so vital and strong, so
he had the energy to unhorse forty
men and please forty women. A dif-
ferent legend claims the coffee ber-
ries saved the life of a disciple of Sheik
Omar, founder of the Shadhiliyya Sufi
Order (Abu al-Hasan al-Shadili Sheik),
who was lost in the desert. Sheik
Omar was famous for healing with the
power of prayer. Following the won-
drous escape from the desert he re-
turned to Mocha, where later on he
became respected as saint.
There are no existent documentary
about when coffee started to be used
as primary ingredient to stimulant
beverages, also when and how the dif-
ferent ways of roasting, grinding and
brewing were discovered. What we
know for sure is that Coffea arabica
has been grown in Arabia ever since
the VI. century. Also there is a docu-
ment, connected to Jabir Geber (Abu
Musa Jaszbir ibn Hayyān),Arab natur-
alist, who refers to this plant as a herb.
Also a Persian author,Rhazes (Muham-
mad ibn Zakariyā Rāzī) describes the
positive effects of coffee (quawa plant)
in his works during the IX. century.
In a work of Avicenna (Abū ʿAlī al-
Ḥusayn ibn ʿAbd Allāh ibn Sīnā) from
the XI. century, called The Canon of
Medicine he describes coffee as cura-
tive even.

Main components of coffee:

There are more than one hundred
components that are responsible for
the aroma of the coffee,that is created
by the process of roasting.
Coffee (for the caffeine content) -
by a modest consumption - stimulates
the central nervous system and the
heart, also acts as vasodilator, raises
blood pressure, enhances the effect
of analgesic medicines, boosts gastric
juice secretion and stimulates the res-
piration centre.
The chlorogenic acid found in coffee
is diuretic and antibilious in effect.
Recently performed experiments
prove that drinking coffee is not as
harmful as many believed so. Accord-
ing to the results of a certain examina-
tion in the field suggest that the active
substance in coffee reduces the risks
of gall bladder sickness, also for its
polyphenol content,that is antioxidant
in effect, coffee merits as high con-
sideration as tea or garlic!

Cocoa tree is native to Middle and
South America, and also grown in sev-
eral tropic countries, such asWest Afri-
ca and Brazil. In nature these trees may
reach a height of even 8–10 m, but cul-
tivated they reach only 3 m high.Middle
American Native tribes (Mayan, Aztec,
Olmec etc.) considered cocoa a holy
plant, and the beverage prepared from
the fruit the brew of gods. A Mayan
legend says, that Quetzalcoatl (the
Feathered Serpent God) gave Cocoa as
a gift to the people,after they were cre-
ated from corns by the Mother God-
dess.

Maca
(Lepidium meyenii)
Maca is only grown in the Andes
above 4–5000 m above sea levels.
Some sources describe it as annual,
some other as biennial. Its various col-
ored roots (red, golden, purple, blue,
black and green) are highly valuated
source of food in the region.
Main components:
Carbohydrates (60 %), protein (10
%), dietary fibres (8,5 %), fat (2,2 %),
uridine, malic acid, and its benzoyl de-
rivative, glucosilonate
Rich in minerals (Selenium, Calcium,

One of two special substance in

Ginseng is the most honored herb
of the Asian Continent. Perennial,
herbaceous plant it is, native in the
mountains of North-East China, and
also in Northern areas of the Korean
Peninsula. Traditional Medicine uses
the roots, both red and white de-
pending on producing procedure.

Soya has one of the oldest cultiva-
tion culture on Earth.The predecessor
or the today known Soya is Glycine
soya, which is native in South-East Asia
and Manchuria.
Main components in soya:
Carbohydrates (20–25 %), Proteins
(35–40 %), Lipids (15–18 % Fatty acids,
mainly Linolic acid and Oil acid ester,
2–3 % Lecithin), and various Isoflavons
Soybean lecithin reduces choles-
terol levels and combined with other
phospholipids protects the liver. Also
soybean isoflavons are effective anti-
oxidant, anticancerous and fitoestro-
gen compounds. Fatty acids have skin
care properties, they reduce dryness
of skin and inflammation of skin. Soy
milk is a valuable substance to increase
the skin’s moisture holding capacity,
and enhances its flexibility. Also it is
adaquate substitute for milk for those
suffering lactose intolerance.
In Asia soya is common nutriment,
used in many ways, for example in
form of tofu, soy milk, and also as

The structure of fatty acids gener-
ally is straightly formed chain of 6-30,

Oils rich in alpha - Linolenic acid are

Plain wheat is the most important grain
(for bread) in our culture.It grew out of
a combination of various ancient plants
originating from Caucasus, Asia Minor
and Middle Asia.Wheat is perennial or
wintering herbaceous plant. Grown
worldwide, especially in countries with
moderate climate. There are different
types of wheat known to provide flour,
such as spelt (Triticum spelta), and du-
rum wheat (Triticum durum).
Main components in wheat:
Seeds contain 10 % fatty oil.The Trigly-
cerides contained in the seed have 50
% of Linoleic acid as main component,
the rest are as follows: Palmitic, Stearic,
Oleic and Linoleic acid. An other valu-
able content is theTocopherols (vitamin

Malt extract:
It is produced by germination of any
type of grain seed (wheat, barley, oat,

certain enzyme is created (diastase)
which transforms cellulose found in
grain seeds into maltose and dextrins.

The tea tree is commonly known
for the past 5000 years so far, and
known to be native in several areas
worldwide, such as China, North-East
India (Assam), Burma and mountains
of Thailand.Trees growing in the wild,
might grow as tall as 10 m,while in cul-
tivation they are 6 m high, evergreen
bushes.
Just like any other species that grow
in various climates, these trees have
developed into different types accord-
ing to their habitat.This bush have two
types actually, one is the frost toler-
ant Chinese type (with slightly nar-
rower and slender leaves) and the
other Indian type which is sensitive to
frost (with rounder and slightly bigger
leaves). These two types in practice

Harvested leaves are not fermented,
but spread on a tray and treated by
hot air,or steam.After this process the
leaves are rolled and slightly roasted.

Harvested leaves are withered,rolled
or finely cut, and they are fermented in
humid air.Then they dry the fermented,
dark colored leaves in hot air.
Oolong tea
Oolong tea is when the leaves are
fermented within a range from 10 to
50 %. Tea, which is less fermented is
called pouchong tea.In Chinese herbal
tea mixes available in Hungary Oo-
long tea is the most frequently used as
component.
WhiteTea
The main region this tea originates
from is Fu Chien andYunnan province.
It is prepared from the bud and the
first leaf under the bud. This type of
tea has the highest antioxidant prop-

Prunella is an abundant twiner,climb-
ing on the grounds of in grasslands,
pastures and croplands, well-known
by the Traditional Chinese Medicine,
however excluded by the European
phytotherapy. It is even mentioned in
Li Shizhen’s famous Bencao Gangmu -
Compendium of Materia Medica, from
1578.

Different citrus species have been
grown for very long period of time
for their fruit. Hungarian language
uses the same name, mandarin for
more than one type of citrus fruit
(e.g. Citrus reticulata, Citrus tanger-
ine, Citrus clementina), but as the
European Pharmacopeia describes
(Ph. Eur. 5.6), mandarin essential oil is
prepared from Citrus reticulata fruit
by a specific mechanical procedure.
Mandarin is grown in huge planta-
tions around Southern European
countries (Italy, Greece, Spain, etc.),
the American continent, and certain
countries of North America, how-
ever mandarin originates from South
China, and the Philippines, where it is
natively growing wild.

Main effects (crust):
Traditional Chinese Medicine uses
the peel instead of essential oils and
the fruit itself. Green, immature peel
is called qing-pi, while the mature
orange peel is called chen-pi. The
first one is for supporting liver func-
tions, the latter one is to support the
spleen, and to ease flatulance. Spica
tea contains the mature peel. Beside
these effects, it supports digestion, it
is anti-inflammatory and expectan-
tory.

Mint is a wild-growing plant not only in
Hungary, but also in China and Japan, as
well as a different type growing in Can-
ada. In moderate climate belt it is widely
grown mainly for producing essential
oil and menthol. It grows an average of
20–40 (rarely 80) cm tall, and resembles
to other types of mint. Its flowers are
purple and they are commonly found in
wet soils.
One of the first mention of this herb is
in a Chinese compendium, in Lei Xiao’s
Leigong baozhilun or ‘Treatise on the
Preparation Remedies’, from the V. cen-
tury.

also Menthon, Menthin acetate as main

Folk medicine defines usage of Wild
Mint greatly similar to Peppermint con-
sidering that in many cases these two
plants were not identified as two of a
kind. Today’s medical therapy uses this
herb in form of Galenus medicines (tab-
lets and drops) and industrial produce as
well, in cases of digestive disorders, ir-
ratible bowel syndrome, bile path com-
plaints. For external use to ease respira-
tion in form of cream,to ease headaches
in massage ointment and packs, to ease
pains of musculoskeletal diseases and in
treatment of oral, or dental symptoms.
Also it is usable as respiratory infection
treatment in form of inhalation as sug-

tive of liquorice known to Hungary.
It even grows wild in China and Japan,
and cultivated in vast amount in Inner
Mongolia. Traditional Chinese Medi-
cine uses rhizomes and the 20–22 cm
long, 1–1,5 cm thick culms, growing
from the rhizomes.It shows how high-
ly this plant is considered by Chinese
and Japanese medicine, that it is listed
in 2000 ‘s Chinese Pharmacopeia, and
the XIV. Japanese Pharmacopeia.

Triterpenoid structured Saponins
(most important are the sweet Gly-
cyrrhisin, and Liquiricic acid, Glabrolid,
Glycyrrhetin acid deriviates, Uralsap-

Noni is a widely known and re-
spected fruit, for nutrition, healthcare
and curative reasons in the South-East
Asian countries around the Pacific.
In ancient Hawaii, Noni bark and
roots were used to make yellow and
red paint, as coloring. When poverty

Ganoderma gradually became more
and more known to the Western
countries, whereas it had been widely
spread in Asia, but it is native even in
Hungary.
Ganoderma has been known to the
Far East, especially Japan, Korea and
China for 4000 years. Used in Trad-
itional Chinese Medicine (TCM) espe-
cially, and has reached a closely similar
importance as ginseng. It was men-
tioned even during the Han Dynasty
(200 B.C. until 200 A.D.) by name of
Lingzhi. Emperor Wu of Han thought
so highly of Ganoderma to consider it
one of the tools for immortality, thus
keeping it inside the castle walls.
Regular and scheduled use enhances
immune functions, helps recovery of
the worsened health, especially im-
portant in cancer treatment of stom-
ach, pancreas, colon, liver as supple-
mentary treatment,and also to reduce
side effects of chemotherapy.
There are series of publications
about Ganoderma used as adjuvant
therapy for hepatitis, carcinoma, dia-
betes, leukemia, although most cases
lack control testing, which is elemen-
tary factor to be validated as proof.
However,in the last decade there have

pear about the therapeutic potential
of Ganoderma.
